| Abstrak (Bhs. Indonesia) | Virgin Coconut Oil (VCO) diketahui memiliki kandungan asam lemak rantai sedang atau Medium-Chain Triglyceride (MCT) hingga 70%, yang bermanfaat bagi kesehatan seperti mencegah penyakit kardiovaskular, serta memiliki nilai jual jauh lebih tinggi dibandingkan VCO di pasaran. Namun, kandungan MCT pada VCO masih bercampur dengan asam lemak rantai panjang dan senyawa lain, sehingga diperlukan proses pengolahan lebih lanjut untuk menghasilkan minyak MCT murni. Salah satu tahapan krusial dalam pengolahan tersebut adalah transesterifikasi, yang sangat dipengaruhi oleh suhu dan waktu pemanasan, suhu maupun waktu yang tidak tepat dapat menurunkan rendemen akibat reaksi samping seperti saponifikasi maupun reaksi balik metil ester menjadi trigliserida. Penelitian terdahulu oleh Hasanah & Warnasih (2020) menggunakan suhu dan waktu transesterifikasi sebesar 55°C selama 3 jam, tetapi belum melakukan variasi maupun optimasi terhadap kedua parameter tersebut, sehingga belum diketahui apakah kondisi tersebut telah menghasilkan rendemen yang paling optimum. Berdasarkan permasalahan tersebut, penelitian ini bertujuan untuk mengoptimasi suhu dan waktu pemanasan pada tahapan transesterifikasi, mengetahui pengaruhnya serta karakteristik kimia produk. Penelitian ini dilakukan melalui empat tahapan utama proses pengolahan minyak MCT, yaitu netralisasi VCO, transesterifikasi VCO netral, isolasi MCFAs (Medium-Chain Fatty Acids), dan sintesis MCT. Optimasi suhu dan waktu pemanasan pada tahap transesterifikasi dilakukan menggunakan pendekatan Response Surface Methodology (RSM) dengan rancangan Central Composite Design (CCD), yaitu metode statistik dan matematika untuk merancang percobaan, membangun model, mengevaluasi pengaruh faktor, serta menentukan kondisi optimum dari faktor-faktor yang memengaruhi respons. Optimasi suhu dan waktu pemanasan pada tahapan transesterifikasi pembuatan minyak MCT dari VCO menggunakan RSM-CCD (Design Expert v.13) menghasilkan titik optimum pada suhu 51,667°C dan waktu 2,244 jam dengan rendemen sebesar 82,347%. Kedua faktor tersebut memiliki hubungan interaksi yang berbanding terbalik, di mana suhu rendah membutuhkan waktu pemanasan lebih lama dan sebaliknya, sementara kondisi suhu maupun waktu yang terlalu tinggi atau terlalu rendah sama-sama menurunkan rendemen. Produk minyak MCT yang dihasilkan memiliki bilangan asam 0,34 mg KOH/g, bilangan peroksida 0,333 meq O₂/kg, bilangan iod 0,697 g I₂/100g, dengan komposisi asam lemak yang masih didominasi oleh asam laurat dan asam miristat. |

Inggris) | Virgin Coconut Oil (VCO) is known to contain up to 70% medium-chain triglycerides (MCTs), which offer health benefits such as preventing cardiovascular disease and command a much higher price than VCO available on the market. However, the MCT content in VCO is still mixed with long-chain fatty acids and other compounds, so further processing is required to produce pure MCT oil. One of the crucial stages in this processing is transesterification, which is highly influenced by heating temperature and time; improper temperature or duration can reduce yield due to side reactions such as saponification or the reverse reaction of methyl esters back into triglycerides. Previous research by Hasanah & Warnasih (2020) used a transesterification temperature of 55°C for 3 hours, but did not vary or optimize these two parameters; therefore, it remains unknown whether these conditions yielded the optimal yield. Based on these issues, this study aims to optimize the temperature and heating time during the transesterification stage, determine their effects, and analyze the chemical characteristics of the product. This study was conducted through the four main stages of the MCT oil processing, namely VCO neutralization, transesterification of neutralized VCO, isolation of MCFAs (Medium-Chain Fatty Acids), and MCT synthesis. Optimization of heating temperature and time during the transesterification stage was performed using the Response Surface Methodology (RSM) approach with a Central Composite Design (CCD)—a statistical and mathematical method for designing experiments, building models, evaluating the effects of factors, and determining the optimal conditions of the factors affecting the response. Optimizing the temperature and heating time during the transesterification stage of MCT oil production from VCO using RSM-CCD (Design Expert v.13) yielded an optimal point at a temperature of 51,667°C and a time of 2,244 hours, with a yield of 82,347%. These two factors exhibit an inverse interaction, such that lower temperatures require longer heating times and vice versa, while both excessively high and excessively low temperatures or times reduce the yield. The resulting MCT oil product has an acid value of 0,34 mg KOH/g, a peroxide value of 0,333 meq O₂/kg, and an iodine value of 0,697 g I₂/100 g, with a fatty acid composition still dominated by lauric acid and myristic acid. |
