Buncis merupakan komoditas pertanian yang  tidak  tahan  lama, mudah busuk dan cepat menurun kualitasnya. 
Kerusakan pada buncis seperti  layu, memar,  lecet kemudian busuk merupakan salah satu penyebab penurunan 
mutu. Hal  tersebut  dikarenakan  kandungan  air  buncis  yang  tinggi  sehingga mikroba  pembusuk  lebih mudah 
berkembang.  Selain  itu  buncis  juga  sangat  dipengaruhi  oleh  keadaan  lingkungan  penyimpanan.  Sehingga 
penting  untuk  mengetahui  pengaruh  lingkungan  terhadap  mutu  buncis.  salah  satu  bentuk  upaya  untuk 
mempertahankan  kualitas  buncis  adalah  dengan  penyimpanan  pada  suhu  rendah  dan  dikemas  menggunakan 
kemasan plastik. Tujuan dari penelitian ini adalah mengetahui pengaruh jenis kemasan plastik terhadap kualitas 
buncis  dan megetahui  jenis  perlakuan  kemasan  yang  tepat  untuk mempertahankan mutu  dari  polong  buncis 
dengan  variable  yang  diukur  diantaranya  adalah  warna,  kekerasan,  kadar  brix,  kadar  air,  dan  susut  bobot. 
Metode  yang  digunakan    dalam  penelitian  ini  adalah  eksperimen  laboratorium  melalui  pengukuran  dan 
pengamatan. Data hasil pengamatan dianalisis menggunakan persamaan kinetika reaksi. Penyimpanan dilakukan 
dalam refrigator selama 10 hari dengan suhu penyimpanan 5o
C dengan perlakuan tanpa kemasan (P0), kemasan 
plastik HDPE (P1), kemasan plastik LDPE (P2), kemasan plastik PP (P3), kemasan plastik strech film (P4). Hasil 
penelitian  menunjukan  bahwa  jenis  kemasan  yang  tepat  untuk  mempertahankan  mutu  pada  buncis  yaitu 
perlakuan dengan kemasan plastik PP (P3).

Beans  is  one  of  agricultural  commodities  that  are  not  durable,  perishable  and  rapidly  about  decreasing  of 
quality. Damage  to  the beans such as wilting, bruising, abrasions and  then rot  is one of  the causes of  quality 
deterioration. That  is  because  the  high water  level  content  of  the  beans  so  that microbial  spoilage  easier  to 
develop. In addition bean is also strongly influenced by the state of the storage environment. So it's important to 
know  the  influence of  the environment on  the quality of  the beans. one of  the efforts  to maintain  the quality of 
the beans are in storage at low temperatures and packed using plastic. The aim of the research was conducted 
was to determine the effect of type of plastic packaging to the quality of the beans and knowing the right type of 
treatment packaging to maintain the quality of the pod beans with a variable that are measured, including the 
color,  hardness,  levels  of  brix,  moisture  content,  and  weight  loss.  The  method  used  in  this  research  was  a 
laboratory experiment through measurements and observations. Data were analyzed using analysis of reaction 
kinetics equation. Storage is done in refrigator for 10 days with a storage temperature of 5 ° C with treatment 
without packaging (P0), HDPE plastic packaging (P1), LDPE plastic packaging (P2), plastic packaging PP (P3), 
plastic packaging stretch film (P4). The results showed that the type of packaging that is appropriate to maintain 
the quality of the beans are treated with plastic packaging PP (P3).
