| Abstrak (Bhs. Indonesia) | Minyak goreng merupakan salah satu kebutuhan pokok manusia. Minyak kelapa murni atau virgin coconut oil (VCO) adalah minyak kelapa yang dibuat dari bahan baku kelapa segar, diproses dengan pemanasan terkendali atau tanpa pemanasan sama sekali dan tanpa bahan kimia. Penelitian ini bertujuan untuk menentukan desain alat yang dibutuhkan agar mencapai hasil optimal. Mekanisasi proses pemerasan perlu dilakukan karena proses pemerasan kelapa parut yang dilakukan dengan cara tradisional selain pemborosan waktu, tenaga, juga ditinjau dari segi kebersihan tidak memenuhi standar kesehatan. Selain itu, kadar air pada produk yang dihasilkan juga masih cukup tinggi karena penggunaan air yang cukup banyak pada saat proses pemerasan. Mekanisasi pemeras kelapa memiliki berbagai tipe diantaranya tipe ulir tekan, tipe silinder dan tipe extruder. Namun desain alat yang dirasa cocok untuk industri menengah seperti di Desa Petanahan yaitu metode ulir tekan karena memiliki kelebihan seperti mudah dioperasikan, perawatan mudah dan dengan modifikasi pada bagian penyimpanan dapat meningkatkan hasil produksi. Mesin pemeras kelapa sistem ulir tekan ini dapat memeras kelapa parut menjadi santan sebanyak 53.2 kg/jam. Itu artinya terdapat peningkatan produksi sebesar 8 kali dari proses sebelumnya |

Pure coconut oil or virgin coconut oil ( VCO ) is coconut oil made from fresh coconut raw materials, processed with a controlled heating or without heating at all and without chemicals. Making regular coconut oil is traditionally done by boiling coconut milk continuously until the coconut oil is obtained. This study aims to determine the design of the tools needed in order to achieve optimal results. Mechanization process is necessary because the process of extortion extortion grated coconut made in the traditional way other than a waste of time, effort, also in terms of cleanliness did not meet health standards. In addition , the water content of the resulting product is still quite high due to the use of enough water during the process of extortion. Mechanization coconut squeezer has a variety of types including screw type press, cylinder type and the type of extruder.
