| Abstrak (Bhs. Indonesia) | Penelitian bertujuan untuk mengevaluasi pengaruh penggunaan tepung daun papaya dalam ransum terhadap susut masak dan daya ikat air daging ayam kampung super. Rancangan percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL), dengan empat perlakuan dan lima kali ulangan, masing-masing perlakuan terdiri dari tiga ekor ayam kampung super, perlakuan terdiri dari R0 = Ransum basal tanpa penambahan tepung daun pepaya 0% R1 = Ransum basal + 2% tepung daun pepaya R2 = Ransum basal + 4% tepung daun pepaya R3 = Ransum basal + 6% tepung daun pepaya. Data diuji dengan analisis variansi. Peubah yang di amati adalah susut masak dan daya ikat air daging bagian dada dan paha ayam kampung super. Hasil penelitian menunjukkan bahwa penggunaan tepung daun pepaya (carica papaya) dalam ransum perpengaruh tidak nyata (P>0,05) terhadap susut masak dan daya ikat air daging ayam kampung super. Rataan susut masak dada dan paha masing-masing 29,26% dan 34,64% sementara rataan DIA dada dan paha masing-masing 20,48% dan 17,98%. Kesimpulan dari penelitian ini adalah penggunaan tepung daun pepaya (carica papaya) pada level 0%, 2%, 4% dan 6% dalam ransum memiliki nilai kualitas daging yang sama ditinjau dari susut masak dan daya ikat air daging ayam kampung super. |

Inggris) | The research aimed to evaluate the use of the papaya leaf meal in the ration on cooking loss and water holding capacity of super native chicken meat as well as the optimum level of the papaya leaf meal in the ration on the water holding capacity and cooking loss of super native chicken meat. Were sampled study used in vivo experimental the methods with CRD experimental design (Completely Randomized Rancagan). four treatments and five replications , each treatment consisted of three super chickens , the treatment consists of R0 = basal diet without the addition of papaya leaf meal 0 % R1 = basal diet + 2 % papaya laef meal R2 = basal diet + 4 % papaya leaf meal R3 = basal diet + 6 % papaya leaf meal . The data were tested by analysis of variance. The observed variables are cooking loss and water holding capacity chest and thigh super native chicken meat. The results showed that the use of leaf powder of papaya ( Carica papaya ) in the ration non significant ( P > 0.05) on cooking loss and water holding capacity super chicken meat . Mean cooking loss chest and thigh respectively 29.26 % and 34.64 % while the average water holding capacity chest and thigh respectively 20.48 % and 17.98 % while . The conclusion of this study is the use of papaya leaf meal (carica papaya) at the levels of 0%, 2%, 4% and 6% in the ration have the same quality of meat as viewed from water holding capacity and cooking loss. |
