| Abstrak (Bhs. Indonesia) | Industri Kecil Menengah (IKM) gula kelapa kristal di Kabupaten Purbalingga merupakan salah satu IKM unggulan. Tujuan umum dari penelitian ini menyusun Dokumen Prosedur Mutu. Adapun tujuan khusus dari penelitian adalah untuk: 1) Mengetahui tingkat penerimaan responden terhadap draft Dokumen Prosedur Mutu yang terdiri dari draft Dokumen Proses Manajemen, draft Dokumen Kontrol Proses dan Sanitasi, draft Dokumen SOP Quality Control/Quality Assurance, draft Dokumen SOP Proses Produksi, draft Dokumen SOP Logistik, dan draft Dokumen SOP Survei dan Pengendalian. Penelitian diawali dengan menyusun draft Dokumen Prosedur Mutu gula kelapa kristal berdasarkan pada SNI gula kelapa kristal (SNI 0268-1985), HACCP, ISO 9001:2008 dan kondisi riil teknis IKM gula kelapa kristal. Hasil penelitian ini menghasilkan draft Dokumen Prosedur Mutu. Tingkat penerimaan draft Dokumen Prosedur Mutu meliputi tingkat penerimaan responden terhadap draft Dokumen Proses Manajemen rata-rata 75,27%, tingkat penerimaan draft Dokumen Kontrol Proses dan Sanitasi rata-rata 74%, tingkat penerimaan draft Dokumen SOP Penyediaan Utilities sebesar 92%, tingkat penerimaan draft Dokumen SOP Quality Control/ Quality Assurance rata-rata 81,4%, tingkat penerimaan draft Dokumen SOP Produksi rata-rata 83%, sedangkan tingkat penerimaan draft Dokumen SOP Logistik rata-rata 77,4%, dan yang terakhir tingkat penerimaan draft Dokumen SOP Survei dan Pengendalian rata-rata 73,7%. |
| Abtrak (Bhs. Inggris) | Small medium enterprise of coconut sugar crystals in Purbalingga is one of trustworthy. As trustworthy IKM, the industry should be supported by good, consistent and continuous quality assurance. The general goal of this research was to compile documents quality procedure. In addition, the specific goal of this research was to know respondents acceptance level towards draft of Quality Procedures Document which consisted of draft of Managemen Proses Document, draft of process and sanitation Control Document, draft of SOP of Utility Supply, draft of SOP Document of Quality Control and Quality Assurance, draft of SOP Document of Production Process, draft of SOP Document of Logistic, and draft of SOP Document of Survey and Control. The study begins with the Quality Procedures Document drafting palm sugar crystals based on ISO coconut sugar crystals ( ISO 0268-1985 ) , HACCP , ISO 9001:2008 and SME technical condition of real coconut sugar crystals . The results of this study resulted in a draft document quality procedure . The level of acceptance of the draft Document Quality Procedures include respondents' level of acceptance of the draft Document Management Process average of 75.27 % , the level of acceptance of the draft Document Process Control and Sanitation average of 74 % , the level of acceptance of the draft SOP Document Supply Utilities by 92%, the level of acceptance of the draft Document SOP Quality Control / Quality Assurance average of 81.4 % , the level of acceptance of the draft Document SOP production average of 83 % , while the rate of acceptance of the draft Document SOP Logistics average of 77.4 % , and the final level of acceptance of the draft Document SOP and Control Survey average of 73.7 % .
