| Abstrak (Bhs. Indonesia) | INTISARI Gula kelapa merupakan produk makanan yang sering digunakan oleh masyarakat. Kualitas produk gula kelapa ditentukan oleh nira kelapa. Nira kelapa merupakan bahan pangan yang rentan terkontaminasi oleh fungi. Beberapa tanaman dapat digunakan sebagai pengawet alami karena diduga memiliki aktivitas antifungi. Daun slatri (Calophyllum soulattri) yang mengandung minyak atsiri, flavonoid, tanin, xanton dan kumarin yang berpotensi sebagai antifungi. Penelitian ini bertujuan untuk mengetahui aktivitas antifungi dari ekstrak daun slatri dan untuk mengetahui nilai KHM dan KBM. Penelitian ini dilakukan dengan metode eksperimental laboratorium. Sebelum dilakukan uji antifungi, terlebih dahulu dilakukan isolasi fungi dari nira kelapa dengan menggunakan metode pengenceran untuk mendapatkan isolat fungi yang menyebabkan kontaminasi pada nira kelapa. Kemudian dilakukan Uji aktivitas antifungi menggunakan metode dilusi cair untuk mengetahuinilai kadar hambat minimum (KHM) dan kadar bunuh minimum (KBM). Uji dilusi dilakukan dengan cara membuat variasi konsentrasi ekstrak 50%, 25%, 12,5%, 6,25%, 3,125%, 1,56%, dan 0,78%. Hasil penelitian menunjukkan bahwa fungi kontaminan yang ditemukan pada nira kelapa adalah dari genus Penicillium sp. Nilai KHM yang didapat adalah sebesar 12,5% sedangkan nilai KBM yang didapat adalah sebesar 18,75%. |

The quality of coconut sugar product is determined by the coconut sap. The coconut sap is a food that vulnerable to contamination by fungi. Some plants can be used as natural preservative, becausethey are suspected having antifungal activity. Slatri leaves (Calophyllum soulattri) which contains essential oils, flavonoids, tannins, and coumarins xanton potential as an antifungal. This study aims to determine the antifungal activity of leaf extracts slatri This research was conducted with laboratory experimental method. Before any antifungal test did, first performed was isolated fungal of the coconut sap by using the dilution method, to obtain isolate fungus that causes contamination of coconut sap. After that , antifungal activity test was did by liquid dilution method to determine the value of minimum inhibitory concentration (MIC) and minimum levels of suicide (KBM). Dilution test was done by making variationof the concentration of extract 50%, 25%, 12.5%, 6.25%, 3.125%, 1.56%, and 0.78%. The results showed that the fungus contaminants, which found at the coconut sap was from the genus Penicillium sp,it seen from the based on macroscopic and microscopic views. MIC value that obtained was 12.5%, whereas the value obtained of KBM was 18.75%.
