| Abstrak (Bhs. Indonesia) | Jamu tradisional merupakan salah satu jenis minuman fungsional serta kelompok obat tradisional yang sudah populer di Indonesia, khususnya di Pulau Jawa jamu digunakan sebagai sarana pemulihan kesehatan. Metode pengolahan jamu yang masih terbilang konvensional dan menggunakan peralatan yang sederhana dikhawatirkan adanya bahaya fisik, kimia, dan biologi. Tegalkamulyan merupakan daerah dengan konsumsi jamu tinggi sehingga banyak penjual jamu tradisional. Berdasarkan hal tersebut telah dilakukan penelitian mengenai analisis bahaya dan evaluasi tingkat keamanan jamu tradisional pegal linu di Kelurahan Tegalkamulyan Kecamatan Cilacap Selatan. Tujuan dari penelitian ini untuk mengidentifikasi bahaya fisik, kimia, dan biologi pada jamu, serta menentukan dan mengevaluasi tingkat keamanan jamu tradisional pegal linu di Kelurahan Tegalkamulyan. Pengambilan sampel dan responden menggunakan metode survei yang dilaksanakan di Kelurahan Tegalkamulyan Kecamatan Cilacap Selatan. Teknik pengambilan dilakukan dengan teknik sensus karena jumlah pedagang hanya 14 responden, kemudian pedagang diwawancarai menggunakan kuisioner dan sampel dianalisis di laboratorium. Variabel yang diamati dalam penelitian ini adalah cemaran kimia, cemaran biologi, cemaran fisik, tingkat pengetahuan, dan tingkat keamanan pangan. Berdasarkan hasil penelitian menunjukan adanya cemaran fisik sebanyak 21,43%. Cemaran kimia sebanyak 35,71% dalam jumlah aman tidak melebihi ambang batas maksimal yaitu 300 mg/Kg. cemaran mikroba rata-rata 7,9 x 107 CFU/ml dan mengandung E.coli 12 MPN/ml sebanyak 7,14%. |

Inggris) | Traditional herbal medicine is one type of functional beverages and traditional medicine group that has been popular in Indonesia, especially in Java herbs used as a means of health recovery. Processing method that is relatively conventional medicine and use simple equipment is feared the danger of physical, chemical and biological. Tegalkamulyan is an area with a high consumption of herbal medicine so much the traditional herbalist. Based on this research has been done on the hazard analysis and evaluation of security level of a traditional herbal medicine in the Village Tegalkamulyan stiff Cilacap District South. The purpose of this research is to identify the physical, chemical, and biological in traditional herbal medicine, as well as define and evaluate the security level of a traditional herbal medicine in the Village Tegalkamulyan stiff Cilacap District South. Sampling and the method of survey respondents conducted in Cilacap District Tegalkamulyan Village South. Retrieval technique was done by using the census as the number of traders is only 14 people, then traders interviewed using questionnaires and laboratory samples analyzed. Variables observed in this study is the content of saccharin, the total number of microbes and E.coli, physical contamination, the level of knowledge and level of food safety. Based on the results of their research in the form of physical contamination hair as much as 21.43%, chemical contaminants such as saccharine as much as 35.71% in the number of safe does not exceed the maximum limit of 300 mg / Kg. Microbial contamination with microbes total average of 7.9 x 107 CFU / ml and E. coli containing 12 MPN / ml in 1 sample or 7.14%. |
