| Abstrak (Bhs. Indonesia) | Gula kelapa kristal merupakan diversifikasi dari produk gula kelapa cetak. Sebuah inovasi dilakukan untuk meningkatkan aktivitas antioksidan pada gula kelapa kristal dengan menambahkan ekstrak antioksidan alami yang berasal dari daun cengkeh, kulit buah manggis, serta daun sirih hijau. Hasil penelitian menunjukkan bahwa kombinasi perlakuan jenis ekstrak daun cengkeh pada jumlah penambahan ekstrak 20 ml/l (E1K1) menghasilkan gula kelapa kristal dengan karakteristik terbaik. Gula kelapa kristal tersebut memiliki kadar abu 1,51 % bk, dan total padatan tak larut 0,55 % bk, dengan sifat sensoris yaitu skor rata-rata rasa getir 2,90 (terasa), skor rata-rata aroma ekstrak 3,33 (agak kuat) dan skor rata-rata kesukaan panelis 2,23 (agak suka). |

| Abtrak (Bhs. Inggris) | Granulated coconut sugar is a diversification of solidified coconut sugar. An innovation is done to increase the antioxidant activity in granulated coconut sugar is by adding extracts of natural antioxidants derived from clove leaf, mangosteen rind and betel leaf green. The results showed that the combination treatment of type leaf extracts of clove on the number of additional extract 20 ml/L (E1K1) produced granulated coconut sugar with the best characteristics. The granulated coconut sugar has a ash content of 1,51% db, and total 0,55% insoluble solids db, with the sensory characteristics is the resulting score average of taste bitterly is 2,90 (noticeably), the average score of the smell of extract is 3,33 (rather strong) and the average score of preferences is 2,23 (rather like). |
