| Abstrak (Bhs. Indonesia) | Pasien penyakit hati berisiko mengalami malnutrisi akibat gangguan metabolisme protein sehingga memerlukan formula enteral tinggi branched-chain amino acids (BCAA). Formula enteral komersial umumnya memiliki harga relatif mahal sehingga diperlukan alternatif formula berbasis pangan lokal yang lebih ekonomis. Penelitian ini bertujuan menganalisis food cost, kandungan gizi, viskositas, daya alir, dan organoleptik formula enteral “Hepasoy” berbasis kacang kedelai, putih telur, dan susu skim untuk pasien penyakit hati. Penelitian menggunakan rancangan eksperimental dengan empat formula, terdiri atas tiga formula blenderized (H1, H2, H3) dan satu formula komersial (H4). Analisis meliputi food cost, kandungan energi, protein, BCAA, densitas energi, uji viskositas, daya alir, serta uji organoleptik menggunakan uji hedonik dan mutu hedonik. Data food cost, kandungan gizi, viskositas, dan daya alir dianalisis secara deskriptif sedangkan data organoleptik dianalisis menggunakan uji Kruskal Wallis dan dilanjutkan uji Mann Whitney. Hasil penelitian menunjukkan formula Hepasoy memiliki food cost sebesar Rp17.678 – 22.057 per 1.000 mL, lebih rendah dibandingkan formula komersial sebesar Rp134.500 per 1.000 mL. Formula H3 merupakan formula terbaik dengan kandungan energi, protein, total BCAA, dan densitas energi yaitu 1.318 kkal, 55 g, 16 g, dan 1,32 kkal/mL secara berurutan. Formula H3 memiliki nilai viskositas 13,63 mPa*s dan daya alir 3,22 cc/detik. Hasil uji organoleptik menunjukkan bahwa formula Hepasoy memperoleh tingkat penerimaan dalam kategori cukup suka (skor 3) hingga suka (skor 4). Perbedaan signifikan terdapat pada parameter aroma (uji hedonik, p=0,001) dan aroma serta tekstur (uji mutu hedonik, p<0,05), sedangkan pada parameter warna, rasa, dan penilaian keseluruhan tidak menunjukkan perbedaan yang signifikan. Formula enteral Hepasoy berbasis kacang kedelai, putih telur, dan susu skim berpotensi dikembangkan sebagai formula enteral tinggi BCAA berbasis pangan lokal yang ekonomis untuk pasien penyakit hati. |

| Abtrak (Bhs. Inggris) | Patients with liver disease are at risk of malnutrition due to protein metabolism disorders and therefore require enteral formulas high in branched-chain amino acids (BCAA). Commercial enteral formulas are generally relatively expensive, so there is a need for more economical alternatives based on local food sources. This study aims to analyze the food cost, nutritional content, viscosity, flowability, and organoleptic properties of the “Hepasoy” enteral formula based on soybeans, egg whites, and skim milk for patients with liver disease. The study employed an experimental design with four formulas, consisting of three blenderized formulas (H1, H2, H3) and one commercial formula (H4). Analyses included food cost, energy content, protein content, BCAA content, energy density, viscosity testing, flowability testing, and organoleptic testing using hedonic and hedonic quality assessments. The organoleptic data were analyzed using the Kruskal Wallis test followed by the Mann Whitney test, while the data on food cost, nutritional content, viscosity, and flowability were analyzed descriptively. The study results show that the Hepasoy formula has a food cost of Rp17,67822,057 per 1,000 mL, which is lower than that of commercial formulas at Rp134,500 per 1,000 mL. Formula H3 was the best formula, with energy content, protein, total BCAA, and energy density of 1,318 kcal, 55 g, 16 g, and 1.32 kcal/mL, respectively. Formula H3 has a viscosity of 13.63 mPa·s and a flow rate of 3.22 cc/second. Organoleptic test results showed that the Hepasoy formula received acceptance ratings ranging from “fairly like” (score 3) to “like” (score 4). Significant differences were found in the aroma parameter (hedonic test, p=0.001) and in both aroma and texture (hedonic quality test, p<0.05), while no significant differences were observed in the color, taste, and overall evaluation parameters. The Hepasoy enteral formula, based on soybeans, egg whites, and skim milk, has the potential to be developed as an economical, locally sourced, BCAA-rich enteral formula for patients with liver disease. |
