| Abstrak (Bhs. Indonesia) | Latar Belakang: Tingginya aktivitas enzim NADPH oxidase pada individu dengan hipertensi memicu pembentukan Reactive Oxygen Species (ROS) penyebab stres oksidatif, sehingga perlu konsumsi pangan yang tinggi antioksidan. Penelitian ini bertujuan untuk mengetahui pengaruh proporsi bunga rosella dan daun alpukat terhadap kadar antioksidan flavonoid, dan vitamin C, serta sensori hedonik, formula terbaik, dan serving size minuman fungsional berbasis serai disubstitusi dengan bunga rosella dan daun alpukat (Serospa). Metodologi: Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan proporsi bunga rosella dan daun alpukat F1 (15:5), F2 (10:10), F3 (5:15). Produk minuman fungsional Serospa ditentukan kandungan flavonoid (metode kolorimetri), vitamin C (titrasi iodiometri), dan sensori hedonik (skoring). Hasil Penelitian: Variasi proporsi bunga rosella dan daun alpukat meningkatkan kadar flavonoid (p=0,000) dengan uji Anova One Way, vitamin C (p=0,000) dengan uji Kruskal wallis, dan menurunkan sensori hedonik (warna (p=0,000), rasa (p=0,000), aroma (p=0,000), dan keseluruhan (p=0,000)) dengan uji Friedmann. Formula terbaik terbuat dari proporsi bunga rosella dan daun alpukat (5:15) dengan kandungan flavonoid 7,12 mgQE/g dan kadar vitamin C 1,22 mg/g, serta skor warna 3,04 (cukup suka); rasa 3,11 (cukup suka); aroma 3,24 (cukup suka) dan keseluruhan 3,28 (cukup suka). Kesimpulan: Proporsi bunga rosella dan daun alpukat (5:15) menghasilkan formula terbaik yang mengandung flavonoid 7,12 mgQE/g, vitamin C 1,22 mg/g, dan skor warna 3,04 (cukup suka); rasa 3,11 (cukup suka); aroma 3,24 (cukup suka) dan keseluruhan 3,28 (cukup suka). Serving size Serospa yang ditentukan sebanyak 42,1 mL dan dapat memenuhi 50% rata-rata asupan harian flavonoid dan 68% kebutuhan vitamin C. |

Inggris) | Background: High levels of NADPH oxidase enzyme activity in individuals with hypertension trigger the formation of reactive oxygen species (ROS), which cause oxidative stress; therefore, it is necessary to consume foods high in antioxidants. This study aims to determine the effect of the proportions of rosella flowers and avocado leaves on the levels of flavonoid antioxidants and vitamin C, as well as on hedonic sensory evaluation, the optimal formulation, and the serving size of a functional lemongrass-based beverage substituted with rosella flowers and avocado leaves (Serospa). Methods: This study used a randomized block design with the following proportions of rosella flowers and F1 avocado leaves (15:5), F2 (10:10), and F3 (5:15). The functional beverage product Serospa was analyzed for flavonoid content (colorimetric method), vitamin C (iodometric titration), and hedonic sensory evaluation (scoring). Result: Variations in the proportions of rosella flowers and avocado leaves increased flavonoid levels (p=0.000) as determined by a one-way ANOVA, vitamin C levels (p=0.000) as determined by a Kruskal-Wallis test, and reduced hedonic sensory attributes (color (p=0.000), taste (p=0.000), aroma (p=0.000), and overall score (p=0.000)) as determined by the Friedman test. The best formula consists of a 5:15 ratio of rosella flowers to avocado leaves, with a flavonoid content of 7.12 mgQE/g and a vitamin C content of 1.22 mg/g, as well as a color score of 3.04 (like it); taste 3.11 (fairly liked); aroma 3.24 (fairly liked); and overall 3.28 (fairly liked). Conclusion: A ratio of rosella flowers to avocado leaves of 5:15 yielded the best formula, containing 7.12 mgQE/g of flavonoids, 1.22 mg/g of vitamin C, and scores of 3.04 for color (fairly liked); 3.11 for taste (fairly liked); 3.24 for aroma (fairly liked); and 3.28 for overall rating (fairly liked). The specified serving size of Serospa is 42.1 mL, which meets 50% of the average daily intake of flavonoids and 68% of the daily requirement for vitamin C. |
