| Abstrak (Bhs. Indonesia) | Latar Belakang: Antioksidan dibutuhkan oleh atlet, termasuk pelari, sebagai lini pertahanan pertama dalam mengatasi stres oksidatif yang dapat menyebabkan kerusakan lemak dan otot serta menurunkan performa. Pengembangan snack bar berbahan dasar pangan lokal buah carica, tepung kedelai, dan gula aren diusulkan sebagai snack alternatif untuk menunjang performa pelari rekreasi. Penelitian bertujuan untuk mengetahui formula terbaik snack bar berdasarkan aktivitas antioksidan serta karakteristik sensori hedonik dan mutu hedonik. Metodologi: Penelitian menggunakan Rancangan Acak Kelompok (RAK) dua faktorial, yaitu proporsi buah carica dan tepung kedelai/faktor A (30:70, 50:50, 70:30) dan persentase gula aren/faktor B (12%; 18%; 24%). Parameter yang dianalisis, yaitu aktivitas antioksidan IC50 dengan metode DPPH dan organoleptik (hedonik & mutu hedonik). Data aktivitas antioksidan dianalisis menggunakan uji two-way ANOVA, sedangkan data organoleptik dianalisis menggunakan uji Friedman. Uji dilanjutkan dengan uji DMRT jika terdapat perbedaan. Penentuan formula terbaik menggunakan metode Indeks Efektivitas De Garmo. Hasil Penelitian: Faktor B berpengaruh terhadap aktivitas antioksidan (p = 0,044), sedangkan faktor A (p = 0,503) dan interaksi (AB) tidak berpengaruh (p = 0,653) terhadap aktivitas antioksidan. Faktor A (p = 0,810) dan interaksi (AB) tidak berpengaruh (p = 0,213) terhadap hedonik aroma. Faktor B tidak berpengaruh terhadap mutu hedonik warna (p = 0,786) dan mutu hedonik aroma (p = 0,122). Kesimpulan: Formula terbaik snack bar, yaitu formula A1B3 (buah carica dan tepung kedelai 30:70, gula aren 24%) dengan aktivitas antioksidan sebesar 30.138,8 ppm dan karakteristik warna cukup cokelat pekat, rasa cukup manis, tekstur cukup padat, dan kurang beraroma buah carica. Inggris) | Background: Antioxidants are essential for athletes, including runners, as the first line of defense against oxidative stress, which can cause fat and muscle damage and impair performance. The development of a snack bar made from local ingredients carica fruit, soy flour, and palm sugar is proposed as an alternative snack to support the performance of recreational runners. The study aims to determine the optimal formula for the snack bar based on antioxidant activity as well as hedonic sensory characteristics and hedonic quality. Methods: The study employed a two-factor randomized block design (RBD), with the proportions of carica fruit and soybean flour as factor A (30:70, 50:50, 70:30) and the percentage of palm sugar as factor B (12%; 18%; 24%). The parameters analyzed were IC50 antioxidant activity using the DPPH method and organoleptic properties (hedonic and hedonic quality). Antioxidant activity data were analyzed using a two-way ANOVA test, while organoleptic data were analyzed using the Friedman test. The tests were followed by a DMRT test if differences were found. The best formula was determined using the De Garmo Effectiveness Index method. Results: Factor B had an effect on antioxidant activity (p = 0.044), whereas factor A (p = 0.503) and the interaction (AB) had no effect (p = 0.653) on antioxidant activity. Factor A (p = 0.810) and the interaction (AB) had no effect (p = 0.213) on hedonic aroma. Factor B had no effect on hedonic color quality (p = 0.786) and hedonic aroma quality (p = 0.122). Conclusion: The optimal formula for snack bars is formula A1B3 (carica fruit and soy flour 30:70, palm sugar 24%), which has an antioxidant activity of 30,138.8 ppm and is characterized by a fairly dark brown color, a fairly sweet taste, a fairly firm texture, and a lack of carica fruit aroma.
