| Abstrak (Bhs. Indonesia) | Ubi jalar merupakan komoditas yang berpotensi sebagai bahan baku agroindustri karena mampu memberikan nilai tambah melalui proses pengolahan. Kabupaten Banyumas merupakan salah satu daerah penghasil ubi jalar dengan produksi mencapai 1.577,34 ton pada tahun 2023. Salah satu produk olahan ubi jalar adalah grubi, yang dapat meningkatkan nilai jual serta memperpanjang umur simpan produk. Agroindustri grubi ubi jalar Pawone Mboke merupakan usaha skala kecil yang masih dalam tahap pengembangan, sehingga diperlukan analisis teknoekonomi untuk mengetahui kondisi usaha dan mendukung pengembangannya. Penelitian ini bertujuan untuk 1) mengkaji aspek pasar dan pemasaran, 2) mengkaji aspek teknis dan teknologis, 3) mengkaji aspek manajemen operasional, 4) mengkaji aspek legalitas (yuridis), dan 5) menganalisis aspek finansial agroindustri grubi ubi jalar Pawone Mboke. Penelitian ini dilaksanakan di agroindustri grubi ubi jalar Pawone Mboke yang berlokasi di Desa Babakan Karanglewas Banyumas, dari bulan Januari 2026 sampai dengan bulan Mei 2026. Metode pengambilan sampel dalam penelitian dilakukan secara Purposive Sampling. Jenis data yang digunakan dalam penelitian adalah data kualitatif dan data kuantitatif. Data kualitatif digunakan untuk menganalisis aspek pasar dan pemasaran (strategi produk), aspek teknis dan teknologis, aspek manajemen operasional, dan aspek yuridis atau legalitas pada agroindustri grubi ubi jalar Pawone Mboke. Data kuantitatif digunakan untuk menganalisis aspek pasar dan pemasaran (analisis permintaan dan penaawaran) dan aspek finansial yang meliputi perhitungan BEP, NPV, IRR, PP, dan analisis sensitivitas pada agroindustri grubi ubi jalar Pawone Mboke. Hasil penelitian menunjukkan bahwa aspek pasar dan pemasaran memiliki peluang pasar yang baik dengan permintaan produk yang terus meningkat serta didukung strategi pemasaran melalui produk berkualitas, harga variatif, promosi sederhana, dan distribusi melalui jaringan mitra. Aspek teknis dan teknologis didukung oleh lokasi usaha yang strategis, ketersediaan bahan baku, peralatan yang memadai, serta proses produksi yang sederhana. Aspek manajemen operasional menunjukkan bahwa usaha dikelola secara sederhana dengan 19 tenaga kerja harian lepas dan sistem penggajian mingguan. Aspek yuridis menunjukkan bahwa usaha telah memiliki Nomor Induk Berusaha (NIB) dan sertifikat halal, namun belum memiliki Sertifikat Produksi Pangan Industri Rumah Tangga (PIRT). Aspek finansial menunjukkan BEP sebesar 2.119 unit atau Rp16.953.072,00, NPV sebesar Rp125.042.801,00, IRR sebesar 74,654%, dan Payback Period selama 1 tahun 6,73 bulan. Hasil analisis sensitivitas menunjukkan usaha masih mampu bertahan pada kenaikan biaya operasional dan penurunan pendapatan sebesar 3–6% serta kenaikan biaya investasi hingga 10%, namun pada kenaikan biaya operasional dan penurunan pendapatan sebesar 10% usaha tidak memenuhi kriteria kelayakan. |
| Abtrak (Bhs. Inggris) | Sweet potatoes are a crop with the potential to be used as a raw material for agroindustry because they can add value through processing. Banyumas is one of the regions that produce ubi jalar, with a production of 1,577.34 tons in 2023. One of the processed products is grubi, which increases the selling price and extends the shelf life of the product. Grubi ubi jalar Pawone Mboke is a small-scale agroindustrial enterprise that is still in the development stage, so a techno-economic analysis is needed to understand the business conditions and support its development. This study aims to: 1) examine the market and marketing aspects, 2) examine the technical and technological aspects, 3) examine the operational management aspects, 4) examine the legal aspects, and 5) analyse the financial aspects of grubi ubi jalar Pawone Mboke. This study was conducted at the grubi ubi jalar Pawone Mboke agroindustry in Babakan, Karanglewas, Banyumas, from January 2026 to May 2026. The research sample was taken using the purposive sampling method. The types of data used in the study are qualitative and quantitative. The qualitative data were used to analyse the market and marketing aspects (product strategy), technical and technological aspects, operational management aspects, and legal aspects or legalities at agroindustry grubi ubi jalar Pawone Mboke. The quantitative data were used to analyse the market and marketing aspects (demand and supply analysis) and the financial aspects, which included calculating the BEP, NPV, IRR, PP and sensitivity analysis for the agroindustry grubi ubi jalar Pawone Mboke. The results of the study show that the market and marketing aspects have good market opportunities with increasing product demand, supported by a marketing strategy involving quality products, variable prices, simple promotions, and distribution through a network of partners. The technical and technological aspects are supported by the strategic location of the business, the availability of raw materials, adequate equipment, and a simple production process. The operational management aspect shows that the business is managed simply with 19 daily casual workers and a weekly pay system. The legal aspect shows that the business has a Business Identification Number (NIB) and a halal certificate, but does not yet have a Home-Based Food Production Certificate (PIRT). The financial analysis shows a BEP of 2,119 units or IDR 16,953,072, an NPV of IDR 125.042.801, an IRR of 74.654%, and a payback period of 1 year and 6.73 months. The sensitivity analysis shows that the business can withstand a 3–6% increase in operating costs and a 10% decrease in income, as well as a 10% increase in investment costs. However, an increase in operating costs and a 10% decrease in income would cause the business to fail to meet the criteria for viability. |
