| Abstrak (Bhs. Indonesia) | Bayam merupakan sayuran yang diajurkan dalam makanan pendamping ASI karena mengandung asam folat yang tinggi tetapi mempunyai kemampuan tinggi menyerap nitrat. Brokoli juga merupakan tanaman yang mengandung asam folat. Penelitian ini bertujuan untuk membandingkan rasio kadar nitrat terhadap asam folat brokoli dan bayam cabut setelah perebusan dan penyimpanan. Penelitian ini dilakukan dengan metode eksperimental laboratorium meliputi determinasi sampel, analisis kualitatif dan kuantitatif nitrat dan asam folat dalam bayam cabut dan brokoli setelah perebusan dan penyimpanan menggunakan metode spektrofotometri UV-Vis. Rasio kadar nitrat terhadap asam folat dalam bayam cabut dan brokoli kemudian dibandingkan menggunakan wilcoxon sum rank test pada taraf kemaknaan 95%. Hasil analisis kualitatif menunjukkan semua sampel positif mengandung nitrat dan asam folat. Hasil analisis kuantitatif menunjukkan rata-rata kadar nitrat bayam cabut 3057,959 ppm dan brokoli 2093,575 ppm, rata-rata kadar asam folat bayam cabut 2,566 ppm dan brokoli 2,158 ppm. Rata-rata rasio kadar nitrat terhadap asam folat bayam cabut 1190,820 dan brokoli 971,144 sehingga rasio kadar nitrat terhadap asam folat brokoli setelah perebusan dan penyimpanan lebih rendah dibanding bayam cabut. |
| Abtrak (Bhs. Inggris) | Spinach is vegetables that are recommended as the baby food complementary of breastfeeding, because it contains folic acid yet has high ability to absorb nitrates. Broccoli also contains folic acid. The objective of this study was to compared nitrate levels ratio to folic acid betwen broccoli and pull spinach after boiling and storage. This research was conducted by laboratory experimental methods including determination samples, qualitative and quantitative analysis of nitrate and folic acid in pull spinach and broccoli after boiling and storage by spectrophotometry UV-Vis method. Nitrate levels ratio to folic acid in pull spinach and broccoli was compared by wilcoxon sum rank test at 95% significance level. The results of the qualitative analysis showed that all of the samples were positive in containing nitrate and folic acid. The results of quantitative analysis showed that average nitrate levels in pull spinach is 3057,959 ppm and broccoli is 2093,575 ppm, average folic acid levels in pull spinach is 2,566 ppm and broccoli is 2,158 ppm. The average ratio of nitrate levels of folic acid in pull spinach is 1190,820 and broccoli is 971,144, it indicated that the ratio of nitrate levels to folic acid in broccoli after boiling and storage was lower than in pull spinach. |
