Indonesia) | Ikan bawal putih memiliki harga yang cukup tinggi jika dibandingkan dengan jenis ikan lainnya, Harga pada ikan bawal putih dapat dipengaruhi beberapa faktor, diantaranya musim, ukuran dan berat ikan. Ukuran dan berat ikan tersebut dipengaruhi oleh sistem pencernaan yang terdapat dalam saluran pencernaan. Pada saluran pencernaan terdapat enzim pencernaan, salah satunya yaitu enzim protease, enzim protease ini akan menghidrolisis protein. Enzim pencernaan juga dapat dihasilkan oleh bakteri proteolitik. Sehingga diperlukan penelitian mengenai bakteri proteolitik pada saluran pencernaan ikan bawal putih (Pampus argenteus). Penelitian ini bertujuan mengetahui keberadaan, aktivitas dan dugaan spesies bakteri proteolitik pada saluran pencernaan ikan tersebut. Metode yang dilakukan adalah observasi dengan teknik pengambilan sampel secaa purposive random sampling. Hasil penelitian menunjukan bahwa pada ikan bawal putih (Pampus argenteus) yang diperoleh dari TPI Ujung Batu, Jepara memiliki kelimpahan bakteri sejumlah 2,2 x 107 CFU/g dan terdapat bakteri proteolitik ditandai terbentuknya zona bening dengan indeks aktivitas sebesar 1,16 (termasuk kategori rendah). Berdasarkan hasil tersebut dan dilakukan uji identifikasi dengan uji biokimia didapatkan dugaan spesies bakteri proteolitik yaitu Bacillus megaterium. |
| Abtrak (Bhs. Inggris) | White pomfret has a relatively high price compared to other types of fish. The price of white pomfret can be influenced by several factors, including season, size, and weight. The size and weight of the fish are influenced by the digestive system in the digestive tract. The digestive tract contains digestive enzymes, one of which is protease, which hydrolyzes proteins. Digestive enzymes can also be produced by proteolytic bacteria. Therefore, research is needed on proteolytic bacteria in the digestive tract of white pomfret (Pampus argenteus). This study aims to determine the presence, activity, and suspected species of proteolytic bacteria in the digestive tract of the fish. The method used is observation with purposive2 random sampling technique. The results of the study showed that white pomfret (Pampus argenteus) obtained from TPI Ujung Batu, Jepara, had a bacterial abundance of 2.2 x 10⁷ CFU/g and contained proteolytic bacteria, indicated by the formation of a clear zone with an activity index of 1.16 (classified as low). Based on these results and biochemical identification tests, the suspected species of proteolytic bacteria was identified as Bacillus megaterium. |
