| Abstrak (Bhs. Indonesia) | Sektor agroindustri beras di Indonesia menghadapi tantangan dalam menjaga ketahanan pangan dari segi kuantitas dan kualitas. Penanganan pascapanen yang baik merupakan salah satu upaya strategis yang dapat meningkatkan produksi beras. Salah satu penanganan pascapanen padi yaitu penggilingan. Proses penggilingan dalam menghasilkan beras dengan kualitas mutu yang baik dipengaruhi oleh cara penanganan beras pada RMU. Berdasarkan hasil wawancara, RMU “Teaching Industry” Unsoed belum pernah melakukan penilaian terhadap tingkat kesesuaian GMP, serta pengujian terhadap mutu fisik gabah dan berasnya. Penilaian dan pengevaluasian kesesuaian GMP ini penting untuk dinilai agar dapat diketahui seberapa besar penerapan GMP di RMU “Teaching Industry” Unsoed. Selain itu, penialaian GMP ini juga penting untuk dilakukan karena dapat dijadikan sebagai suatu upaya dalam mengatasi rendahnya mutu beras dan meningkatkan daya saing. Penelitian ini bertujuan untuk: 1) Mengidentifikasi mutu gabah dan beras yang dihasilkan oleh RMU “Teaching Industry” Unsoed. 2) Mengevaluasi kesesuaian penerapan Good Manufacturing Practices (GMP) di RMU “Teaching Industry” Unsoed. Parameter yang diukur adalah kesesuaian GMP dan mutu fisik gabah, serta beras. Data yang diperoleh dalam penelitian ini, yaitu data deskriptif dari hasil wawancara dan observasi, serta data kuantitatif dari hasil pengujian mutu fisik gabah dan beras. Hasil penelitian menunjukkan bahwa dua sampel gabah belum memenuhi standar mutu SNI berdasarkan SNI 224:2023 dan dua sampel beras belum standar mutu SNI berdasarkan SNI 6128:2020. Sementara itu, tingkat kesesuaian GMP di RMU “Teaching Industry” Unsoed yaitu 84,61%. |

| Abtrak (Bhs. Inggris) | The rice agro-industry sector in Indonesia faces challenges in maintaining food security in terms of both quantity and quality. Effective post-harvest handling is one strategic effort that can enhance rice production. One aspect of post-harvest handling is milling. The milling process, which produces rice of good quality, is influenced by how the rice is handled at the Rice Milling Unit (RMU). Based on interviews, the RMU “Teaching Industry” at Unsoed has never conducted an assessment of GMP compliance or tested the physical quality of its paddy and rice. Evaluating GMP compliance is important to understand the extent of GMP implementation at the RMU “Teaching Industry” Unsoed. Additionally, this GMP assessment is crucial as it can be used to address the low quality of rice and improve competitiveness. This study aims to: 1) Identify the quality of paddy and rice produced by the RMU “Teaching Industry” Unsoed. 2) Evaluate the suitability of Good Manufacturing Practices (GMP) implementation at the RMU “Teaching Industry” Unsoed. The parameters measured include GMP compliance and the physical quality of paddy and rice. The data obtained in this study consist of descriptive data from interviews and observations, as well as quantitative data from physical quality testing of paddy and rice. The results indicate that two paddy samples did not meet SNI quality standards according to SNI 224:2023, and two rice samples did not meet SNI quality standards according to SNI 6128:2020. Meanwhile, the level of GMP compliance at the RMU “Teaching Industry” Unsoed is 84.61%. |
