| Abstrak (Bhs. Indonesia) | Tujuan penelitian ini adalah mengkaji proses non thermal pada susu kambing sapera dengan memanfaatkan senyawa ozon yang bersifat oksidatif dan anti bakteri. Proses ozonisasi dilakukan dengan pemaparan senyawa ozon kedalam susu kambing sapera. Penelitian ini mengkaji konsentrasi ozon yang ideal untuk susu kambing sapera setelah diozonisasi pada suhu ruang yang diukur dari total solid dan viskositas. Materi yang digunakan dalam penelitian meliputi toples kaca, botol jar 300 ml, backer glass 50 ml, pengaduk kaca, seperangkat alat ozonisasi, lactoscan, viscometer brookfield, label, tisu, dan susu kambing sapera sebanyak 18 liter. Penelitian dilakukan secara eksperimen menggunakan metode Rancangan Acak Lengkap (RAL) terdiri dari 3 perlakuan (0 mg, 0,0 3334mg, dan 0,06668mg) dan diulang sebanyak 6 kali setiap perlakuan. Variabel yang diamati adalah total solid dan viskositas. Hasil analisis variansi menunjukan bahwa konsentrasi ozon yang berbeda tidak berpengaruh nyata terhadap total solid dan viskositas susu kambing sapera. Kesimpulan penelitian ini adalah metode ozonisasi dengan konsentrasi (0 mg, 0,03334mg, dan 0,06668mg) menghasilkan total solid dan viskositas yang sama dengan perlakuan kontrol pada susu Kambing Sapera. |

| Abtrak (Bhs. Inggris) | The aim of this research is to examine the non-thermal process in sapera goat milk by utilizing ozone compounds which have oxidative and anti-bacterial properties. The ozonation process is carried out by exposing ozone compounds to sapera goat's milk. This research examines the ideal ozone concentration for sapera goat's milk after ozonization at room temperature as measured by total solids and viscosity. The materials used in the research included glass jars, 300 ml jar bottles, 50 ml backer glass, glass stirrers, a set of ozonation tools, lactoscan, Brookfield viscometer, labels, tissue, and 18 liters of sapera goat's milk. The research was carried out experimentally using the Completely Randomized Design (CRD) method consisting of 3 treatments (0 mg, 0.0 3334mg, and 0.06668mg) and repeated 6 times for each treatment. The variables observed were total solids and viscosity. The results of the variance analysis showed that different ozone concentrations had no significant effect on the total solids and viscosity of sapera goat's milk. The conclusion of this research is that the ozonation method with concentrations (0 mg, 0.03334mg, and 0.06668mg) produces the same total solids and viscosity as the control treatment for Sapera goat milk. |
