| Abstrak (Bhs. Indonesia) | Agroindustri adalah industri yang mengubah hasil pertanian menjadi barang setengah jadi atau jadi. Industri tahu adalah salah satu contoh agroindustri di Indonesia. Tahu populer karena harganya yang terjangkau dan kesehatannya. Kabupaten Sukoharjo memiliki banyak industri tahu, terutama di Kecamatan Kartasura. Data menunjukkan bahwa produksi tahu harian rata-rata di Kecamatan Kartasura adalah 195 kg dengan variasi harga. Efisiensi dan nilai tambah merupakan faktor penting dalam industri ini. Fluktuasi harga bahan baku, penggunaan teknik produksi tradisional, dan masalah efisiensi adalah tantangan utama yang dihadapi oleh pengrajin tahu di Kelurahan Kartasura. Penelitian ini bertujuan untuk: (1) mengetahui biaya produksi, penerimaan, dan keuntungan, pengrajin tahu di Kelurahan Kartasura, (2) mengetahui tingkat efisiensi agroindustri tahu di Kelurahan Kartasura, (3) Mengetahui nilai tambah pada agroindustri tahu di Kelurahan Kartasura. Penelitian ini menggunakan metode survey, dimana responden diambil dari seluruh agroindustri tahu yang berada di Kelurahan Kartasura yakni sebanyak 37 responden. Jenis data penelitian ini menggunakan data primer dan sekunder. Analisis data yang digunakan dalam penelitian ini adalah analisis biaya, penerimaan, keuntungan, analisis efisiensi (efisiensi teknis, alokatif, dan ekonomi), dan analisis nilai tambah. Hasil penelitian agroindustri tahu di Kelurahan Kartasura menunjukkan bahwa agroindustri tahu selama satu bulan membutuhkan rata-rata total biaya produksi sebesar Rp74.903.393,00, rata-rata total penerimaan sebesar Rp78.662.797,00, dan memiliki rata- rata keuntungan sebesar Rp3.759.404,00 per bulan. Agroindustri tahu di Kelurahan Kartasura sudah efisien secara teknis sebesar 0,99, tetapi tidak efisien secara alokatif maupun ekonomi sebesar -0,227 sehingga diperlukan pengurangan-pengurangan input agar usaha agroindustri tahu tersebut efisien. Nilai tambah pada agroindustri tahu di Kelurahan Kartasura sebesar Rp2.354,00 per kilogram atau sebesar 15,83 persen yang termasuk dalam kategori nilai tambah sedang. |
| Abtrak (Bhs. Inggris) | Agroindustry is an industry that transforms agricultural products into semi-finished or finished goods. The tofu industry is one example of agroindustry in Indonesia. Tofu is popular due to its affordable price and health benefits. Sukoharjo Regency has many tofu industries, especially in Kartasura District. Data indicates that the average daily production of tofu in Kartasura District is 195 kg with varying prices. Efficiency and added value are important factors in this industry. Fluctuations in raw material prices, the use of traditional production techniques, and efficiency issues are the main challenges faced by tofu artisans in Kartasura Subdistrict. This study aims to: (1) determine the production costs, revenues, and profits of tofu artisans in Kartasura Subdistrict, (2) determine the efficiency level of the tofu agroindustry in Kartasura Subdistrict, and (3) determine the added value of the tofu agroindustry in Kartasura Subdistrict. This research uses a survey method, with respondents taken from all tofu agroindustries in Kartasura Subdistrict, totaling 37 respondents. The types of data used in this research include primary and secondary data. The data analysis methods used in this research are cost analysis, revenue analysis, profit analysis, efficiency analysis (technical, allocative, and economic efficiency), and added value analysis. The results of the research on the tofu agroindustry in Kartasura Subdistrict show that the tofu agroindustry requires an average total production cost of Rp74,903,393.00 per month, with an average total revenue of Rp78,662,797.00 and an average profit of Rp3,759,404.00 per month. The tofu agroindustry in Kartasura Subdistrict is technically efficient with a score of 0.99 but is not allocatively or economically efficient with a score of -0.227, indicating the need for input reductions to achieve overall efficiency. The added value in the tofu agroindustry in Kartasura Subdistrict is Rp2,354.00 per kilogram or 15.83 percent, which falls into the category of moderate added value |
