Abstrak (Bhs. Indonesia)Egg roll merupakan salah satu makanan ringan dengan paduan rasa manis, gurih, renyah, berbentuk gulungan panjang berlubang atau pipa. Umumnya pembuatan egg roll dilakukan menggunakan bahan baku berupa terigu, sehingga penggunaan mocaf sebagai pengganti terigu diharapkan dapat menghasilkan produk egg roll yang bersifat bebas gluten. Egg roll bebas gluten memiliki tantangan tersendiri untuk dapat diterima oleh konsumen baik mutu maupun secara keseluruhan. Upaya yang dapat dilakukan untuk mengetahui keinginan konsumen adalah dilakukannya survey konsumen menggunakan metode Importance Performance Analysis (IPA) dan Customer Satisfaction Index (CSI). Berdasarkan hal tersebut, penelitian ini dilakukan dengan tujuan: 1). Menetapkan atribut dari tiap tiap variabel yang memiliki tingkat kepentingan tertinggi. 2). Menetapkan atribut dari tiap tiap variabel yang memiliki tingkat kepuasan teringgi. 3). Menetapkan atribut dari tiap tiap variabel yang memiliki tinggi kesesuaian tertinggi. 4). Menetapkan atribut unggulan dari produk berdasarkan matriks IPA. 5). Menetapkan atribut yang direkomendasikan untuk diperbaiki berdasarkan matriks IPA. 6). Menetapkan indeks kepuasan konsumen.
Penelitian ini menggunakan metode Importance Performance Matrix dan Customer Satisfaction Index (CSI). Kuesioner disajikan menggunakan Google Form yang terdiri dari pertanyaan terbuka dan terutup dengan skala likert 1-5 mengenai 3 variabel (mutu produk, kemasan, harga dan promosi). Pengambilan sampel menggunakan purposive sampling technique dengan kriteria responden berusia minimal 17 tahun dan pernah mengkonsumsi CassaBe egg roll yang merupakan produk egg roll bebas gluten minimal 2x dalam 2 bulan terakhir. Unknown population digunakan sebagai acuan jumlah minimum sampel dikarenakan populasi konsumen CassaBe egg roll tidak diketahui secara pasti sehingga penelitian ini menggunakan data dari 100 responden.
Hasil penelitian menunjukkan tingkat kepentingan tertinggi terdapat pada atibut kerenyahan, kemampuan kemasan melindungi produk, dan kesesuaian harga, dan kualitas produk. Tingkat kepuasan tertinggi terdapat pada atribut kerenyahan kelengkapan informasi pada label kemasan, dan kemudahan memperoleh produk di toko online. Tingkat kesesuaian tertinggi terdapat pada atribut dimensi kemasan, kandungan nilai fungsional yaitu gluten free (bebas gluten) dan high dietary fiber (tinggi serat pangan), dan kemudahan memperoleh produk di toko online. Importance Performance Matrix menunjukkan bahwa terdapat 5 atribut pada egg roll CassaBe yang perlu dipertahankan (atribut rasa, aroma, kerenyahan, daya tarik desain label, dan kelengkapan informasi pada label kemasan) dan 5 atribut prioritas perbaikan (kesesuaian harga dan kualitas, promosi melalui pameran atau bazar, kemampuan kemasan mempertahankan umur simpan produk, kemampuan kemasan melindungi produk, dan berat produk). Berdasarkan metode Customer Stisfaction Index (CSI), CassaBe egg roll memperoleh nilai sebesar 77.35% dengan kategori puas.
Abtrak (Bhs. Inggris)Egg roll is one of the snacks with a blend of sweet, savory, crunchy flavors, in the form of a long hollow roll or a pipe. In general, the production of egg rolls uses flour as raw material, so the use of mocaf as a substitute for flour is expected to produce gluten-free egg roll products. Gluten-free egg rolls have their own challenges to be accepted by consumers both in quality and as a whole. Efforts that can be made to find out consumer desires are conducting consumer surveys using the Importance Performance Analysis (IPA) and Customer Satisfaction Index (CSI) methods. Based on this, this research was conducted with the objectives: 1). Determine the attribute of each variable that has the highest level of importance. 2). Determine the attributes of each variable that has the highest level of satisfaction. 3). Determine the attribute of each variable that has the highest suitability. 4). Determine the superior attributes of the product based on the IPA matrix. 5). Define the recommended attributes for improvement based on the IPA matrix. 6). Establish a consumer satisfaction index.
This study uses Importance Performance Matrix and Customer Satisfaction Index (CSI) methods. The questionnaire was presented using a Google Form which consisted of open and closed questions with a Likert scale of 1-5 regarding 3 variables (product quality, packaging, price and promotion). Sampling used a purposive sampling technique with the criteria that the respondent was at least 17 years old and had consumed CassaBe egg roll which is a gluten-free egg roll product at least 2x in the last 2 months. Unknown population is used as a reference for the minimum sample size because the population of CassaBe egg roll consumers is not known with certainty, so this study uses data from 100 respondents.
The results showed that the highest level of importance was found in the attributes of crispness, the ability of packaging to protect the product, and price suitability, and product quality. The highest level of satisfaction is found in the crispness, completeness of the information on the packaging labels, and the ease of obtaining products in online stores. The highest level of conformity is found in the attributes of packaging dimensions, content of functional values, namely gluten free and high dietary fiber, and the ease of obtaining products in online stores. Importance Performance Matrix shows that there are 5 attributes of CassaBe egg rolls that need to be maintained (attributes of taste, aroma, crispness, attractiveness of label design, and completeness of information on packaging labels) and 5 priority attributes of improvement (price and quality suitability, promotion through exhibitions or bazaars, packaging capabilities maintain product shelf life, packaging capabilities protect products, and product weight). Based on the Customer Stisfaction Index (CSI) method, CassaBe egg rolls scored 77.35% in the satisfied category.
