Indonesia) | Keripik tempe cokelat yang di produksi oleh UKM “Suka Nicky” di Kabupaten Banjarnegara, pemilihan kemasan untuk produk ini sangat diperlukan untuk mempertahankan kerenyahan produk. Keterangan umur simpan (masa kadaluarsa) produk pangan merupakan salah satu informasi yang wajib dicantumkan oleh produk pada label kemasan produk pangan. Tujuan dari penelitian ini adalah untuk memperoleh umur simpan dari produk keripik tempe cokelat dalam berbagai jenis kemasan dengan metode pendekatan kadar air kritis. Penentuan umur simpan dilakukan dengan menggunakan pendekatan kadar air kritis berdasarkan persamaan Labuza. Penyimpanan dilakukan dengan menggunakan kemasan standing pouch aluminium foil dan kemasan stoples mika plastik. Hasil penelitian menunjukkan, walau keripik tempe cokelat disimpan pada kondisi lingkungan yang sama dapat memberikan umur simpan yang berbeda. Kemasan standing pouch aluminium foil memiliki umur simpan 2,5 bulan, sedangkan kemasan stoples mika plastik memiliki umur simpan 2,3 bulan. |

Inggris) | Keripik tempe cokelat produced by SME’s "Suka Nicky" in Banjarnegara Regency, the choice of packaging for this product is very necessary to maintain the crispness of the product. Information on the shelf life (expiration period) of food products is one of the information that must be included by the product on the food product packaging label. The purpose of this study was to obtain the shelf life of chocolate tempeh chips in various types of packaging using the critical moisture content approach. Shelf life determination was carried out using the critical moisture content approach based on the Labuza equation. Storage is carried out using aluminum foil standing pouch packaging and plastic mica jar packaging. The research results show that even though chocolate tempeh chips are stored in the same environmental conditions, they can provide different shelf life. The aluminum foil standing pouch packaging has a shelf life of 2,5 months, while the plastic mika jar packaging has a shelf life of 2,3 months. |
