| Abstrak (Bhs. Indonesia) | Tujuan penelitian untuk mengetahui konsentrasi sari jahe yang tepat dalam perendaman ayam niaga petelur afkir bagian paha dilihat dari kadar air dan total bakteri. Metode penelitian yang digunakan adalah experimental dengan Rancangan Acak Lengkap (RAL) sebagai rancangan percobaan, dilakukan dengan 4 perlakuan dan 5 ulangan. Data dianalisis dengan Analisis Variansi (ANOVA), jika hasil analisis berpengaruh nyata, maka dilanjutkan Uji Ortogonal Polinomial. Hasil penelitian menunjukkan rataan kadar air untuk R0, R1, R2, R3 secara berurutan adalah 77,68; 76,36; 75,16; 75,68 %. Berdasarkan hasil analisis variansi memperlihatkan bahwa perlakuan tidak berpengaruh nyata (P>0,05) terhadap kadar air. Hasil total bakteri menunjukkan rataan R0, R1, R2, R3 secara berurutan adalah 8,68 x 106; 3,82 x 106; 1,84 x 106 dan 4,32 x 105 CFU/gram. Berdasarkan hasil analisis variansi memperlihatkan bahwa perlakuan berpengaruh nyata (P<0,05) terhadap total bakteri, kemudian dilanjutkan dengan Uji Ortogonal Polinomial. Penurunan total bakteri dalam persen (%) secara berurutan dari R1, R2 dan R3 adalah 56, 79, 95 %. Kesimpulan dari penelitian peningkatan konsentrasi sari jahe yang ditambahkan ke dalam larutan perendaman menghasilkan kadar air yang sama, tetapi mampu menurunkan total bakteri daging. Konsentrasi sari jahe sebesar 30 % menurunkan total bakteri paling tinggi sebesar 95 %. |
| Abtrak (Bhs. Inggris) | The purpose of the study was to determine the right concentration of ginger extract in the soaking of spent laying hens in terms of moisture content and total bacteria. The research method used was experimental with a completely randomized design (CRD), conducted with four treatments and five replicates. The data were processed by Analysis of Variance (ANOVA), if the results had a significant effect, then continued with the Orthogonal Polynomial Test. The results showed that the moisture content for R0, R1, R2, R3 was 77.68; 76.36; 75.16; 75.68%, respectively. Based on the results of analysis of variance showed that the treatment had no significant effect (P>0.05) on moisture content. The results of total bacteria R0, R1, R2, R3 were 8.68 x 106; 3.82 x 106; 1.84 x 106 and 4.32 x 105 CFU/gram respectively. Based on the results of the analysis of variance showed that the treatment had a significant effect (P < 0.05) on total bacteria, then continued with the Orthogonal Polynomial Test. The decrease of total bacteria in percent (%) sequentially from R1, R2 and R3 were 56, 79, 95%. The conclusion of the study is that increasing the concentration of ginger extract added to the soaking solution gives the same water content, but is able to reduce the amount of total bacteria. Ginger extract concentration of 30% reduced the total bacteria by 95%. |
