Abstrak (Bhs. Indonesia)Ikan Glodok (Mudskipper) merupakan salah satu jenis ikan yang hidup di
daerah estuari pada ekosistem mangrove. Ikan glodok memiliki kandungan
protein yang tinggi, kandungan protein yang tinggi pada ikan glodok umumnya
baru diketahui dari dagingnya saja. Sedangkan pada bagian lain dari ikan glodok
diduga juga memiliki potensi kandungan protein yang sama tingginya.
Penelitian ini bertujuan mengetahui kadar protein bagian mata dan kulit ikan
glodok serta mengetahui komparasi kadar protein tubuh ikan Glodok
(Boleophthalmus boddarti) dari kawasan Hutan Mangrove Karang Talun,
Kabupaten Cilacap. Penentuan kadar protein kulit dan mata ikan glodok
dilakukan berdasarkan metode Kjeldahl menurut Association of Official
Agricultural Chemist (AOAC) (2005). Kadar protein mata dan kulit ikan glodok
sebesar 30,01 ± 2,54% dan 34,04 ± 4,76%. Sedangkan, kadar protein bagian tubuh
ikan Glodok berturut- turut adalah kulit sebesar 34,04%, mata 30,01%, dan
daging 17,7%.
Abtrak (Bhs. Inggris)Glodok fish (Mudskipper) is one type of fish that lives in estuaries in the
mangrove ecosystem. Glodok fish has a high protein content, high protein
content in Glodok fish is generally only known from the meat. Meanwhile, in
other parts of the Glodok fish, it is suspected that it also has the same high protein
content potential. This study aims to determine the protein content of the eye and
skin of glodok fish and to compare the protein content of the body of Glodok fish
(Boleophthalmus boddarti) from the Mangrove Forest of Karang Talun, Cilacap
Regency. Determination of skin and eye protein content of Glodok fish was
carried out based on the Kjeldahl method according to the Association of Official
Agricultural Chemist (AOAC) (2005). The protein content of the eyes and skin of
Glodok fish was 30,01 ± 2,54% and 34,04 ± 4,76%, respectively. Meanwhile, the
protein content of Glodok fish body parts were skin 34.04%, eyes 30.01%, and
meat 17.7%.
