Indonesia) | ABSTRAK PENGARUH PEMBERIAN YOGURT KECAMBAH KACANG TOLO (Vigna unguiculata) TERHADAP KADAR C-REACTIVE PROTEIN (CRP) PLASMA PENDERITA DIABETES MELITUS TIPE II Indah Amalia Safira¹, Hery Winarsi², Afina Rachma Sulistyaning ³ Latar Belakang: Hiperglikemia pada diabetes melitus Tipe II (DMT-II) menimbulkan peningkatan produksi Reactive Oxygen Species (ROS). Ketidakseimbangan antara peningkatan ROS dengan ketersediaan antioksidan dapat menimbulkan kondisi stres oksidatif, kerusakan jaringan, dan penurunan imunitas tubuh. Sistem imun yang rendah menyebabkan penderita DMT-II rentan terkena infeksi dan menyebabkan inflamasi. Produk pangan kaya antioksidan seperti yogurt kecambah kacang tolo (yocamcalo) diharapkan mampu memperbaiki status imun penderita DMT-II dengan menurunkan kadar CRP plasma. Metodologi: Penelitian eksperimental ini menggunakan rancangan Randomized Controlled Trial (RCT) single blind. Penelitian dilaksanakan pada Februari-Maret 2022 di Laboratorium Pengolahan Pangan dan Kuliner Ilmu Gizi Unsoed dan Desa Purwosari Purwokerto. Responden berjumlah 18 orang dibagi menjadi kelompok perlakuan (yocamcalo) dan kelompok kontrol (plasebo). Diukur kadar CRP plasma sebelum dan setelah intervensi. Data karakteristik responden dianalisis menggunakan uji independent sampe t-test dan mann whitney, penurunan kadar CRP plasma dianalisis menggunakan uji wilcoxon dan uji paired sampe t-test. Hasil Penelitian: Setelah dua bulan pemberian yocamcalo 200 mL/hari, terjadi penurunan rata-rata kadar CRP plasma dari 44,79mg/L menjadi 27,09 mg/L (p=0,008) Kesimpulan: Pemberian yocamcalo 200 mL/hari selama 2 bulan terbukti mampu menurunkan kadar CRP plasma pada penderita Diabestes Melitus Tipe II. Inggris) | ABSTRACT THE EFFECT OF GIVING TOLO BEAN (Vigna unguiculata) YOGURT TOWARDS C-REACTIVE PROTEIN (CRP) LEVELS OF TYPE II DIABETES MELLITUS PATIENTS Indah Amalia Safira¹, Hery Winarsi², Afina Rachma Sulistyaning ³ Background: Hyperglycemia in Type II diabetes mellitus (DMT-II) causes an increase in the production of Reactive Oxygen Species (ROS). The imbalance between the increase in ROS and the availability of antioxidants can lead to conditions of oxidative stress, tissue damage, and decreased immunity. A low immune system causes DMT-II sufferers to be susceptible to infection and cause inflammation. Antioxidant-rich food products such as tolo bean sprout yogurt (yocamcalo) are expected to improve the immune status of DMT-II patients by reducing plasma CRP levels. Methodology: This experimental study used a single blind Randomized Controlled Trial (RCT). The research was carried out in February-March 2022 at the Laboratory of Food Processing and Culinary Nutrition Unsoed and Purwosari Village, Purwokerto. The 18 respondents were divided into the treatment group (yocamcalo) and the control group (placebo). Measured plasma CRP levels before and after the intervention. The respondent's characteristic data were analyzed using the independent sample t-test and Mann Whitney test, the decrease in plasma CRP levels was analyzed using the Wilcoxon test and the paired sample t-test. Research Results: After two months of giving yocamcalo 200 mL/day, the average plasma CRP level decreased from 44.79 mg/L to 27.09 mg/L (p=0.008) Conclusion: Giving yocamcalo 200 mL/day for 2 months has been shown to be able to reduce plasma CRP levels in patients with Type II Diabetes Mellitus.
