| Judul Artikel | Analisis Nilai Gizi Produk Formula Enteral Berbasis Bahan Pangan Lokal sebagai Potensi Terapi Gizi Buruk |
| Abstrak (Bhs. Indonesia) | Latar Belakang: Penanganan gizi buruk dapat dilakukan salah satunya dengan pemberian formula enteral. Ubi jalar ungu, ikan lele, tempe kedelai dan labu kuning memiliki kandungan gizi yang berpotensi dapat digunakan sebagai terapi gizi buruk. Penelitian ini bertujuan untuk menganalisis zat gizi makro dan β-karoten yang terkandung pada formula enteral berbasis ubi jalar ungu, ikan lele, tempe kedelai dan labu kuning untuk terapi gizi buruk. Metodologi: Penelitian eksperimental dengan rancangan acak lengkap (RAL) menggunakan empat formula yaitu L1, L2, L3 dan L4 dengan perbandingan tepung ikan lele dan tepung tempe kedelai secara berurutan 19 : 31, 21 : 29, 23 : 27, 25 : 25. Analisis statistik dilakukan dengan uji Oneway Anova serta uji lanjutan menggunakan uji Duncan. Hasil Penelitian: Hasil penelitian menunjukkan dalam 100g formula L1 mengandung 73,09% karbohidrat, 8,89% protein dan 18,03% lemak dari total energi serta 7,62 mg β-karoten. 100g formula L2 mengandung 74,27% karbohidrat, 9,46% protein dan 16,27% lemak dari total energi serta 7,40mg β-karoten. 100g formula L3 mengandung 74,29% karbohidrat, 9,78% protein dan 15,93% lemak dari total energi serta 10,15 mg β-karoten. 100g formula L4 mengandung 73,62% karbohidrat, 10,21% protein dan 16,17% lemak dari total energi serta 9,08 mg β-karoten. Hasil formula terpilih yaitu formula L4. Kesimpulan: Rata-rata nilai gizi pada produk formula enteral terpilih yaitu 399,60 kkal/100g energi, 10,21% protein, 16,17% lemak dan 9,08 mg/100g β-karoten. |
| Abtrak (Bhs. Inggris) | Background: One of the procedure to handle malnutrition is by gived enteral formulas. Purple sweet potato, catfish, soybean tempe and yellow pumpkin have nutrient content that could be the potential to be used as a therapy for malnutrition. This study aims to analyze macro nutrients and β-carotene contained in the enteral formulas based on purple sweet potato, catfish, soybean tempe and yellow pumpkin for malnutrition therapy. Method: This study used a completely randomized design (CRD) used four formulas, there are L1, L2, L3 and L4 with the proportion catfish and soybean tempe sequentially 19 : 31, 21 : 29, 23 : 27, 25 : 25. Statistic analysis used OneWay Anova and advanced test used Duncan. Result: The result showed that in the 100g formula L1 contains 73,09% carbohydrates, 8,89% protein and 18,03% fat of total energy and 7,62 mg β-carotene. The 100g formula L2 contains 74,27% carbohydrates, 9,46% protein and 16,27% fat of total energy and 7,40 mg β-carotene. The 100g formula L3 contains 74,29% carbohydrates, 9,78% protein and 15,93% fat of total energy and 10,15 mg β-carotene. The 100g formula L4 contains 73,62% carbohydrates, 10,21% protein and 16,17% fat of total energy and 9,08 mg β-carotene. The result of the selected formula is formula L4. Conclusion: The average nutritional value of the selected enteral formula products were 399,60 kcal/100g energy, 10,21% protein, 16,17% fat and 9,08 mg/100g β-carotene. |
