| Judul Artikel | FORMULASI GARAETTEOK TINGGI ZAT BESI DAN PROTEIN DENGAN PENAMBAHAN TEPUNG DAUN KELOR (Moringa oleifera) SEBAGAI ALTERNATIF SNACK UNTUK MENCEGAH ANEMIA PADA REMAJA |
| Abstrak (Bhs. Indonesia) | Latar Belakang : Garaetteok merupakan pangan olahan asal Korea Selatan berbahan dasar tepung beras yang saat ini banyak disukai oleh remaja. Penambahan daun kelor yang mengandung zat besi, protein, dan vitamin C pada pembuatan Garaetteok merupakan salah satu upaya untuk mencegah anemia pada remaja. Metodologi : Penelitian ini merupakan studi eksperimen non faktorial dengan rancangan acak lengkap. Perlakuan yang dicoba adalah penambahan tepung daun kelor (F) = 5% (F1), 10% (F2), dan 15% (F3). Perlakuan diulang sebanyak 6 kali sehingga terdapat 18 unit percobaan. Variabel yang diamati yaitu uji kesukaan (hedonik) meliputi kesukaan terhadap warna, aroma, rasa, tekstur, dan kesukaan keseluruhan (overall). Hasil terbaik berdasar analisis sensori dilakukan pengamatan terhadap kandungan energi, protein, zat besi, dan vitamin C. Hasil Penelitian : Hasil penelitian menunjukkan bahwa semakin banyak penambahan tepung daun kelor akan menurunkan kesukaan terhadap variabel rasa Garaetteok daun kelor. Namun, penambahan tepung daun kelor tidak mempengaruhi kesukaan terhadap variabel warna, aroma, tekstur, dan kesukaan secara keseluruhan. Perhitungan indeks efektivitas menunjukkan produk dengan penambahan tepung daun kelor 5% merupakan produk yang paling disukai. Produk hasil terbaik memiliki kadar air 52,2%, kadar abu 0,87%, kadar protein 3,05%, kadar lemak 0,26%, kadar karbohidrat 46,5%, zat besi 6,03 mg/100g, vitamin C 21,83 mg/100g, dan energi sebesar 201 kkal/100g. Kesimpulan : Satu porsi Garaetteok Daun Kelor hasil terbaik yaitu sebanyak 105g yang bila dikonsumsi sebanyak 2 kali dalam satu hari akan memenuhi kebutuhan protein sebanyak 10%, zat besi 82%, dan vitamin C 62% pada remaja. |
| Abtrak (Bhs. Inggris) | Background : Garaetteok is a processed food from South Korea made from rice flour which teenagers currently favour. The addition of Moringa leaves containing iron, protein, and vitamin C in the manufacture of Garaetteok is one of the efforts to prevent anaemia in adolescents. Methodology : This research is a non-factorial experimental study with a completely randomized design. The treatments tried were the addition of Moringa leaf flour (F) = 5% (F1), 10% (F2), and 15% (F3). The treatment was repeated six times so that there were 18 experimental units. Observed variabels: sensory (hedonic), including colour, aroma, taste, texture, and preference. The best results based on sensory analysis were observed in the content of energy, protein, iron, and vitamin C. Research Results : The results showed that adding Moringa leaf flour affected the taste variable. However, the preference of Moringa Leaf Garaetteok by adding Moringa leaf flour had no significant effect on the colour, aroma, texture, and preference variabels. The calculation of the effectiveness index shows the product with the addition of 5% Moringa leaf flour is the most preferred product. The best product has a water content of 52.2%, an ash content of 0.87%, a protein content of 3.05%, a fat content of 0.26%, carbohydrate content of 46.5%, the iron content of 6.03 mg/100g, vitamin C of 21.83 mg/100g, and energy of 201 kcal/100g. Conclusion: One serving of Moringa Leaf Garaetteok has the best results, which is 105 grams which, when consumed two times a day, will meet the needs of 10% protein, 82% iron, and 62% vitamin C in youth. |
