| Abstrak (Bhs. Indonesia) | Penelitian ini berjudul “Valuation of Food Waste in Sate Bebek Restaurant in Tambak District”. Tujuan dari penelitian ini adalah valuasi ekonomi sisa makan sate bebek yang ada di warung-warung sate bebek di Kecamatan Banyumas dalam bentuk rupiah. Jenis penelitian ini adalah Penelitian ini menggunakan metode nilai valuasi, responden yang digunakan sebanyak 24 orang para pemilik rumah makan sate bebek. Teknik pengumpulan data yaitu menggunakan wawancara dan observasi serta kuisioner sedangkan untuk teknik analisis menggunakan teknik valuasi sisa makan. Kemudian Sisa nasi makan tersebut ditimbang dengan menggunakan timbangan dalam satuan kilogram. Setelah data tersebut didapatkan, data tersebut di catat sebagai sumber penghitungan sisa makan. Data tersebut dihitung dengan menggunakan rumus valuasi sisa makan. Nanti bisa ditemukan valuasi sisa makan sate bebek.. Hasil penelitian ini menunjukan bahwa nilai sisa makan sate bebek di semua rumah makan baik besar, sedang, maupun kecil. Pengklasifikasi rumah makan besar, sedang maupun kecil didasarkan pada produksi sate bebek perporsi. Nilai sisa makan di tujuh rumah makan sate bebek kategori besar adalah Rp788.517 (tujuh ratus delapan puluh delapan ribu lima ratus tujuh belas rupiah) Nilai sisa makan di sembilan rumah makan sate bebek kategori sedang sebesar sebesar Rp761.248 (tujuh ratus enam puluh satu ribu dua ratus empat puluh delapan rupiah). Delapan rumah makan sate bebek kategori kecil sebesar sebesar Rp405.115 (empat ratus lima ribu seratus lima belas rupiah). Jika di total semuanya rumah makan baik besar, sedang dan kecil sebesar Rp1.954.880 (dua ratus tujuh puluh enam juta lima ratus lima puluh tujuh ribu sepuluh rupiah) perhari dan dapat disimpulkan bahwa konsumen sangat boros dalam menyisakan sisa makan di 24 rumah makan sate bebek di Kecamatan Tambak baik kategori kecil, sedang dan besar. |
| Abtrak (Bhs. Inggris) | This research is entitled "Valuation of Food Waste in Sate Bebek Restaurant in Tambak District". The purpose of this research The purpose of this study is the economic valuation of food waste sate bebek in sate bebek restaurants in Tambak District in the form of rupiah. This type of research is quantitative research. The data used are primary data. The data collection technique used interviews and observations and questionnaires, while the analysis technique used the food waste valuation technique. Then the remaining meal is weighed using a scale in kilograms. After the data is obtained, the data is recorded as the source of calculating the food waste. The data is calculated using the food waste valuation formula. Will find the valuation of the remaining sate bebek food. The results of this study indicate that the residual value of food waste eating sate bebek in all restaurants, whether large, medium or small. The classification of large, medium and small restaurants is based on the production of sate bebek per proportion. The value of food waste at the seven large sate bebek restaurants is IDR 788,517 (seven hundred eighty eight thousand five hundred and seventeen rupiahs.) The remaining value of the meal in the medium category of nine sate bebek restaurants is IDR 761,248 (seven hundred sixty one thousand two hundred forty eight rupiahs. Eight small sate bebek restaurants, amounting to IDR 405,115 (four hundred five thousand one hundred and fifteen rupiahs). If in total all the restaurants, both large, medium and small, are IDR 1,954,880 (two hundred and seventy-six million five hundred and fifty-seven thousand and ten rupiahs) and it can be concluded that consumers are very wasteful in leaving food leftovers at 24 sate bebek restaurants in Tambak District, both in the small, medium and large categories. |
