Indonesia) | ABSTRAK PERBAIKAN STATUS ANTIOKSIDAN SUPEROKSIDA DISMUTASE (SOD) PARA TENAGA KESEHATAN MENGGUNAKAN YOGURT KECAMBAH KACANG HIJAU Nur Amalia Lael1 , Hery Winarsi2 , Gumintang Ratna Ramadhan3 Latar Belakang : Kondisi pandemi Covid-19 menyebabkan tingginya tingkat stres para tenaga kesehatan, sehingga dapat meningkatkan stres oksidatif yang ditandai dengan rendahnya kadar superoksida dismutase (SOD) plasma. Produk kaya antioksidan seperti yogurt kecambah kacang hijau (yocamio) diharapkan mampu memperbaiki status antioksidan SOD para tenaga kesehatan. Metodologi : Penelitian eksperimental ini menggunakan rancangan randomized controlled trial (RCT) single blind. Penelitian ini dilaksanakan di Laboratorium Pengolahan Pangan dan Kuliner Ilmu Gizi Universitas Jenderal Soedirman serta Rumah Sakit Sinar Kasih Purwokerto. Responden berjumlah 14 orang, dibagi menjadi 2 kelompok, yaitu kelompok perlakuan (diberi yocamio) dan kelompok kontrol (diberi plasebo). Diambil plasma darah untuk diukur kadar SOD plasma tenaga kesehatan sebelum dan setelah dilakukan intervensi. Hasil Penelitian : Setelah dua bulan pemberian yocamio 200 mL/hari, terjadi peningkatan kadar SOD secara signifikan yaitu dari 88,86 pg/mL menjadi 176,05 pg/mL (p=0,044), sementara pada kelompok plasebo juga terjadi kenaikan namun tidak signifikan (p=0,590). Kesimpulan : Pemberian yocamio 200 mL/hari selama 2 bulan terbukti dapat meningkatkan kadar SOD plasma para tenaga kesehatan. |

Inggris) | ABSTRACT IMPROVEMENT OF ANTIOXIDANT STATUS OF SUPEROXIDE DISMUTASE (SOD) BETWEEN HEALTH WORKERS USING MUNG BEAN SPROUT YOGURT Nur Amalia Lael1 , Hery Winarsi2 , Gumintang Ratna Ramadhan3 Background: The Covid-19 pandemic condition caused high levels of stress among health workers that can increase oxidative stress which was characterized by low plasma superoxide dismutase (SOD) levels. Antioxidant-rich products such as mung bean sprout yogurt (yocamio) was expected to improve the SOD antioxidant status of health workers. Methodology: This experimental study used a randomized controlled trial (RCT) single blind. This research was conducted at the Laboratory of Food Processing and Culinary Nutrition at Jenderal Soedirman University and Sinar Kasih Hospital, Purwokerto. There were 14 respondents, divided into 2 groups, which were the treatment group (given yocamio) and the control group (given placebo). Blood plasma was taken to measure the plasma SOD levels of health workers before and after the intervention. Results: After two months of administering yocamio 200 mL/day, there was a significant increase in SOD levels from 88.86 pg/mL to 176.05 pg/mL (p=0.044), while in the placebo group there was also an increase but not significant. (p=0.590). Conclusion: Administration of yocamio 200 mL/day for 2 months has proved to increase plasma SOD levels of health workers. |
