Abstrak (Bhs. Indonesia)Konsumen yang percaya akan khasiat susu kambing PE akan mempertimbangkan kandungan gizi terutama protein dan laktosa karena kandungan nutrisi tersebut mempengaruhi Berat Jenis pada susu. Hal tersebut mendorong peneliti untuk mengkaji kualitas susu kambing PE terutama kadar protein dan laktosa. Penelitian ini dilakukan dengan metode non eksperimental dan uji laboratorium, teknik pengambilan sampel dengan purposive sampling pada empat kelompok di Kecamatan Gumelar diantaranya kelompok Pegumas, Tunas Mukti, Bondomertani, dan Satoguno. Setiap desa diambil lima sampel dari lima peternak. Sampel susu diamati dan diidentifikasi dengan alat Lactoscan Milk Analyzer di Laboratorium Produksi Ternak Perah Fakultas Peternakan Unsoed. Data sampel susu yang ditemukan pada peternak dari setiap lokasi dianalisis varian menggunakan software SPSS 16 dan menggunakan regresi linear. Hasil identifikasi Kandungan kadar protein susu kambing PE di kelompok Pegumas 3,72 % ; Bondomertani 4,25 % ; Tunas Mukti 3,93 % ; dan Satoguno 4,26. Kandungan kadar laktosa susu kambing PE di kelompok Pegumas 3,72 % ; Bondomertani 4,03 % ; Tunas Mukti 3,73 % ; dan Satoguno 4,07 % kadar protein dan laktosa sudah memenuhi stadart. Kadar protein memiliki pengaruh terhadap kadar laktosa yaitu sebesar 97 %, dengan persamaan linier Y = 0,9731 – 0,096x.

Abtrak (Bhs. Inggris) Consumers who believe in the efficacy of PE goat milk will consider the nutritional content, especially protein and lactose because these nutrients affect the density of milk. This prompted researchers to study the quality of PE goat milk, especially protein and lactose levels. This research was conducted using non-experimental methods and laboratory tests, the sampling technique was purposive sampling in four groups in Gumelar sub-district, including the Pegumas group, the Tunas Mukti group in, the Bondomertani group and the Satoguno group. Each village was taken five samples from five breeders. The milk samples were then observed and identified using the Lactoscan Milk Analyzer at the Dairy Production Laboratory, Faculty of Animal Husbandry, Unsoed. Data on milk samples found in breeders from each location were analyzed for variance using SPSS 16 software and using linear regression. The results of the identification of the protein content of goat milk with PE in the Pegumas group were 3,72 % ; Bondomertani 4,25 % ; Tunas Mukti 3,93 % ; and Satoguno 4,26. The lactose content of PE goat milk in the Pegumas group was 3,72 % ; Bondomertani 4,03 % ; Tunas Mukti 3,73 % ; and Satoguno 4,07 % protein and lactose levels have met the standard. Protein content has an effect on lactose levels, which is 97%, with the linear equation Y = 0.9731 - 0.096x
