Indonesia) | Abstrak PENGEMBANGAN BROWNIES KUKUS TALAHIBU UNTUK IBU HAMIL KURANG ENERGI KRONIK (KEK) Islamiati Putri Amalia, Hery Winarsi, Gumintang Ratna Ramadhan Latar Belakang: Prevalensi Ibu hamil yang memiliki risiko Kurang Energi Kronis (KEK) cukup tinggi (24,2%). KEK pada Ibu hamil membutuhkan intervensi pemberian makanan tambahan (PMT) seperti brownies. Dari banyak jenis produk kue, brownies yang diperkaya dengan tepung talas-kecambah kacang hijau dan ubi jalar ungu (TALAHIBU) dipilih karena produk ini padat energi. Brownies TALAHIBU diharapkan dapat memiliki nilai organoleptik yang disukai, dan energi, sehingga cocok sebagai PMT. Metodologi: Penelitian eksperimental faktorial ini menggunakan Rancangan Acak Kelompok (RAK) dengan 2 faktor terdiri dari: Proporsi tepung talas-kecambah kacang hijau (G) 70:30 (G1); 60:40 (G2); 50:50 (G3) dan persentase penambahan ubi jalar kukus (J) 40% (J1) dan 50% (J2). Terdapat 6 kombinasi perlakuan diulang sebanyak 4 kali sehingga diperoleh 24 unit percobaan. Uji organoleptik meliputi uji hedonik (rasa, aroma dan tekstur) dan uji mutu hedonik (rasa, aroma, dan tekstur) yang diujikan pada 55 panelis. Analisis variabel organoleptik menggunakan Uji Friedman dan dilanjutkan dengan Uji Banding Ganda 5%. Produk yang terbaik, dilanjutkan Uji Proksimat, uji total fenolik, dan perhitungan energi. Hasil Penelitian: Perlakuan terbaik adalah brownies TALAHIBU dengan proporsi tepung talas-kecambah kacang hijau 60:40 dengan presentase penambahan ubi jalar ungu kukus 50% (G2J2). Hasil uji proksimat brownies TALAHIBU G2J2 meliputi kandungan kadar air 23,94%bb; kadar abu 3,16%bb; lemak 25,7%bb; karbohidrat 45,57%bb; protein 1,63%bb; energi 419,83kkal; dan antioksidan total fenolik 19,1mg/g. Kesimpulan : Brownies TALAHIBU perlakuan terbaik (G2J2) dapat dijadikan PMT untuk Ibu hamil KEK dengan serving size 2 potong brownies perhari. Inggris) | Abstract DEVELOPMENT OF TALAHIBU ANTIOXIDANT-RICH STEAM BROWNIES FOR PREGNANT WOMEN CHRONIC ENERGY DEFICIENCY (CED) Islamiati Putri Amalia, Hery Winarsi, Gumintang Ratna Ramadhan Background: Prevalence of pregnant women who have a risk of Chronic Energy Deficiency (CED) is quite high (24.2%). CED in pregnant women requires additional feeding interventions (PMT) such as brownies. Of the many types of cake products, brownies enriched with taro flour-mung bean sprouts and purple sweet potato (TALAHIBU) were chosen because brownies are energy-dense products. TALAHIBU brownies is expected to have the preferred organoleptic value and energy as PMT. Methodology: This factorial experimental study used a randomized block design (RBD) with 2 factors, consisting of: The proportion of taro flour-mung bean sprouts (G) 70:30 (G1); 60:40 (G2); 50:50 (G3) and the percentage of added fine steamed sweet potato (J) 40% (J1) and 50% (J2). There were 6 treatment combinations that were repeated 4 times in order to obtain 24 experimental units. Organoleptics were tested to 55 panelists using Hedonic (taste, aroma, and texture) and also using Hedonic Value (taste, aroma, and texture). Organoleptic variable analysis used the Friedman test and continued with the 5% Multiple Appeal Test. The best treatment combination product was chosen, then continued with the Proximate test, total phenolic test and energy calculations were performed . Results: The best treatment was TALAHIBU brownies with the proportion of 60:40 taro-mung bean sprouts flour with the addition of 50% fine steamed purple sweet potato (G2J2). The proximate test results of TALAHIBU brownies G2J2 include water content of 23.94% BW; ash content 3.16% bb; fat 25.7% BW; carbohydrates 45.57% bb; protein 1.63% bb; energy 419.83kcal; and antioxidants total phenolic 19,1 mg/g. Conclusion : The best poduct TALAHIBU brownies (G2J2) is suitable to be PMT for pregnant women with CED by serving 2 slice brownies perday.
