| Abstrak (Bhs. Indonesia) | Penggunaan coating pada buah cabai merah dapat mempertahankan kualitas buah selama masa penyimpanan sehingga aman untuk dikonsumsi manusia. Tujuan dari penelitian ini mengetahui pengaruh jenis pati untuk coating terhadap karakteristik kimia dan fisik selama penyimpanan cabai merah serta kombinasi perlakuan jenis pati untuk coating dan ukuran nozzle. Penelitian ini merupakan jenis penelitian eksperimental Rancangan Acak Lengkap (RAL) faktorial. Hasil penelitian menunjukkan kombinasi perlakuan terpilih untuk buah cabai merah adalah pengaplikasian coating berbahan pati ubi jalar dilapis dengan nozzle sprayer ukuran 0,6 mm. Perlakuan tersebut nilai total padatan terlarut sebesar 13,5 °Brix, Vitamin C sebesar 0,1 mg/g, tingkat kekerasan sebesar 0,19 kg/cm, tingkat kecerahan 33,34 dan kadar air 69%. |
| Abtrak (Bhs. Inggris) | Edible coating can be a good way of handling post harvest fruits.. The objective of this study are to know the effect raw material coating for physical and chemical properties on chilli pepper, influence variation of measure nozzle sprayer against characteristic of chemical and physical during storage; the combined effect type of treatment for coating and measures against characteristic nozzle chemical and physical during storage. This is an experimental and factorial reasearch with Completely Randomized Design. The results showed that The combination of selected treatments is a sample with edible coating made from sweet potato starch applied with nozzle sprayer 0.6 mm diameter. The sample has 13.5 °Brix of total soluble solid, vitamin C of 0.1 mg/g, hardness rate of 0.19 kg/cm 33,34 (L*) Brightness and 69% water content. |
