| Abstrak (Bhs. Indonesia) | Plastik merupakan salah satu jenis kemasan yang sangat populer di masyarakat. Plastik memiliki keunggulan dibanding dengan bahan pengemas lain seperti sifatnya yang ringan, transparan, kuat, termoplatis dan selektif dalam permeabilitasnya terhadap uap air, O2 dan CO2. Namun dibalik semua itu plastik juga memiliki berbagai dampak negatif baik bagi kesehatan maupun lingkungan. Oleh karena itu diperlukan suatu alternatif bahan pengemas yang lebih aman untuk menggantikan kemasan plastik. Tujuan penelitian ini yaitu untuk mengetahui karakteristik biodegradable film berbahan dasar pati tapioka, pati sukun dan pati kentang dengan 2 jenis plasticizer (gliserol dan sorbitol) pada tingkat konsentrasi yang berbeda. Rancangan percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL) faktorial. Faktor yang diteliti adalah jenis pati yakni pati tapioka, pati sukun dan pati kentang; jenis plasticizer yakni gliserol dan sorbitol; konsentrasi plasticizer yakni 4%, 6%, dan 8%. Variabel yang diamati berupa variabel kimia yakni kadar air dan kadar abu; variabel fisik yakni ketebalan dan kelarutan; serta variabel organoleptik berupa warna, transparansi, aroma dan tekstur permukaan. Hasil penelitian menunjukkan bahwa 1) film berbahan dasar pati sukun memiliki kadar abu dan ketebalan yang lebih tinggi dari film berbahan dasar pati tapioka dan pati kentang; 2) gliserol menghasilkan film dengan kadar air lebih tinggi dibandingkan film dengan plasticizer sorbitol. Sorbitol menghasilkan film dengan kadar abu dan kelarutan lebih tinggi dibandingkan film dengan plasticizer gliserol; 3) konsentrasi plasticizer 8% menghasilkan film dengan kelarutan yang lebih tinggi dibandingkan film dengan konsentrasi plasticizer 4% dan 6%; 4) interaksi jenis pati, jenis plasticizer dan konsentrasi plasticizer meningkatkan kelarutan film yang dihasilkan. Berdasarkan hasil analisis terhadap karakteristik sensoris, kadar air dan kelarutan diperoleh perlakuan terpilih yaitu film pati tapioka dengan plasticizer sorbitol 8% (A1B2C3). | Abtrak (Bhs. Inggris) | Plastic is the one of popular packaging types in the world. It has better characterictic than other packaging such as light, transparent, solid, termoplastic and selective againts water vapor, oxygen and carbon dioxide. However in the other hand plastic has negative impact on health and the environment. So packaging alternatives that more secure are needed.The purpose of this study was to determine the characteristics of biodegradable films made from tapioca starch, breadfruit starch and potato starch with 2 types of plasticizers (glycerol and sorbitol) at different concentration levels. This research used a completely randomized design (CDR). Factors examined were types of starch such as casava starch, bread fruit starch and potato starch; types of plasticizer such as glicerol and sorbitol; plasticizer concentration such as 4%, 6%, and 8% 2 replication to each other. Chemical variables observed are water content and mineral content. Physical variables observed are thickness and water solubility. Sensory variables observed are color, transparency, odor, and surface texture. Chemical and physical variabeles data were analyzed using the F test, if the result of analysis are signifiacnt continued with Duncan Multiple Range Test (DMRT) test at a level of 5%. The results showed that 1) breadfruit starch based films have higher mineral content and thickness than tapioca starch based films and potato starch; 2) glycerol produces films with higher water content than films with sorbitol plasticizers. Sorbitol produces films with higher mineral content and solubility than films with glycerol plasticizer; 3) 8% plasticizer concentration produces films with higher solubility than films with a plasticizer concentration of 4% and 6%; 4) interaction of starch types, types of plasticizer and concentration of plasticizer increases the solubility of the film. Based on the results of the analysis of sensory characteristics, water content and solubility, the selected treatment was obtained, namely tapioca starch with 8% sorbitol plasticizer (A1B2C3).
