Abstrak (Bhs. Indonesia)Penelitian berjudul “Penambahan Kolostrum Sapi dengan Persentase yang Berbeda pada Kefir Susu terhadap Kadar Protein, Antioksidan dan Kadar Air”. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan kolostrum sapi terhadap kadar protein, antioksidan dan kadar air, serta mengetahui perbedaan pengaruh peningkatan persentase kolostrum sapi pada kefir susu. Materi yang digunakan adalah susu sapi sebanyak 17,5 liter, kolostrum sapi 3 liter, biji kefir 400 gram. Metode penelitian eksperimen menggunakan Rancangan Acak Lengkap (RAL), dengan 4 perlakuan dan 5 kali ulangan. Perlakuan terdiri dari P0 = susu sapi 100% + kolostrum sapi 0%, P1 = susu sapi 90% + kolostrum sapi 10%, P2 = susu sapi 80% + kolostrum sapi 20%, P3 = susu sapi 70% + kolostrum sapi 30%. Peubah yang di ukur adalah kadar protein, antioksidan dan kadar air. Hasil analisis variansi menunjukan bahwa penambahan kolostrum sapi dengan persentase sampai dengan 30% pada kefir susu berpengaruh sangat nyata (P<0.01) terhadap kadar protein, antioksidan dan kadar air dengan rataan kadar protein 2,28%, antioksidan 62,29% dan kadar air 87,01%. Hasil uji lanjut Beda Nyata Jujur (BNJ) yaitu Perlakuan P3 berbeda sangat nyata dengan P0 pada kadar protein, antioksidan dan kadar air.
Abtrak (Bhs. Inggris)The study entitled "Addition of Cow Colostrum with Different Percentages of Milk Kefir to Protein Content, Antioxidant and Water Content". This study aims to determine the effect of addition of cow colostrum on protein content, antioxidant and water content, and to know the difference in the effect of increasing the percentage of cow colostrum on milk kefir. The material used was 17.5 liters of cow milk, 3 liters of cow colostrum, 400 grams of kefir grain. The experimental research method uses Completely Randomized Design (CRD), with 4 treatments and 5 replications. Treatment consisted of P0 = 100% cow milk + cow colostrum 0%, P1 = cow milk 90% + cow colostrum 10%, P2 = cow milk 80% + cow colostrum 20%, P3 = 70% cow milk + cow colostrum 30% . The variables measured were protein content, antioxidant and water content. The results of the variance analysis showed that the addition of cow colostrum with a percentage of up to 30% in milk kefir had a very significant effect (P <0.01) on protein content, antioxidant and water content. The average protein content was 2.28%, 62.29% antioxidant and water content 87.01%. The results of further tests of Honest Real Difference (BNJ), namely the P3 treatment differed significantly with P0 on protein, antioxidant and water content.
