| Abstrak (Bhs. Indonesia) | Usaha untuk menciptakan produk pangan yang bermutu dapat dilakukan dengan menerapkan sistem penjaminan mutu dalam proses produksi. UD Anisa merupakan salah satu IKM yang memproduksi makanan ringan berbasis jagung berupa eggroll, getas, dan nasi jagung instan, namun belum menerapkan sistem penjaminan mutu. Penerapan sistem penjaminan mutu yang terstruktur dan terdokumentasi dapat disajikan dalam dokumen sistem penjaminan mutu yang terdiri atas manual mutu, prosedur mutu, instruksi kerja, dan formulir mutu. Dokumen prosedur mutu merupakan salah satu dokumen yang akan sangat membantu dalam penerapan dan aplikasi seluruh aspek dalam penjaminan mutu pada rangkaian proses produksi. Tujuan penelitian ini adalah (1) menyusun dokumen sistem penjaminan mutu produk olahan jagung UD Anisa; (2) mengetahui pengaruh kaji tindak terhadap tingkat persetujuan, kepentingan, pelaksanaan, dan kemudahan penerapan dokumen prosedur mutu; Penelitian dilakukan dengan metode kaji tindak, terdiri atas awal kaji tindak, kaji tindak, dan akhir kaji tindak, dengan jumlah responden sebanyak 5 orang. Data dianalisis menggunakan uji t berpasangan dengan α = 0,05. Hasil menunjukkan bahwa kaji tindak mampu meningkatkan persepsi para responden terhadap prosedur mutu dan menunjukkan perbedaan yang nyata pada variabel proses manajemen, SOP QC, SOP logistik, SOP sanitasi, SOP survei kepuasan konsumen, dan SOP pengendalian produk return. Namun, tidak berbeda nyata pada variabel SOP produksi. Sedangkan variabel kontrol proses dan sanitasi serta SOP utilitas hanya berbeda nyata pada dua penilaian saja. |
| Abtrak (Bhs. Inggris) | Efforts to create quality food products can be done by implementing a quality assurance system in the production process. UD Anisa is one of the SMEs that produces corn-based snacks in the form of eggroll, brittle, and instant corn rice, but has not yet implemented a quality assurance system. The application of a structured and documented quality assurance system can be presented in a quality assurance system document consisting of quality manuals, quality procedures, work instructions, and quality forms. The quality procedure document is one of the documents that will be very helpful in the application and application of all aspects of quality assurance in the series of production processes. The purpose of this study is (1) to compile the UD Anisa corn processed product quality assurance system document; (2) knowing the effect of the review of actions on the level of approval, interests, implementation, and ease of implementation of quality procedure documents; The study was carried out by the action review method, consisting of the initial action review, action review, and final action review, with the number of respondents as many as 5 people. Data were analyzed using t-test paired with α = 0.05. The results showed that the action review was able to improve respondents' perceptions of quality procedures and showed significant differences in management process variables, QC SOP, logistics SOP, sanitation SOP, consumer satisfaction survey SOP, and product control return SOP. However, it is not significantly different from the production SOP variable. While the process and sanitation control variables and utility SOPs were only significantly different in the two assessments. |
