| Abstrak (Bhs. Indonesia) | Yogurt drink nira kelapa merupakan inovasi yogurt yang encer dan mudah diminum dengan bahan baku utama nira kelapa dan susu skim. Yogurt drink nira kelapa memerlukan stabilizer dan susu skim untuk menghasilkan produk yang homogen dan tingkat keasaman yang baik. Penelitian ini bertujuan untuk mengetahui pengaruh jenis stabilizer, konsentrasi susu skim, serta kombinasi jenis stabilizer dan konsentrasi susu skim terhadap karakteristik sensori yogurt drink nira kelapa. Hasil penelitian menunjukkan kombinasi perlakuan dengan karakteristik sensori lebih baik dari kombinasi perlakuan lainnya terdapat pada perlakuan jenis stabilizer gum arab dan konsentrasi susu skim 15%. Kombinasi perlakuan tersebut menghasilkan yogurt drink dengan karakteristik: homogenitas homogen (3,83); tingkat keasaman agak asam (2,65); dan tingkat kesukaan suka (3,77). |
| Abtrak (Bhs. Inggris) | Coconut sap drink yogurt is an innovation of yogurt in liquid form and easy to drink and made from coconut sap and skim milk. Coconut sap drink yogurt requires stabilizer and skim milk to get a homogeneous texture and good acidity. This research aims to determine the effect of stabilizer types, concentration of skim milk, as well as the combination of stabilizer types and skim milk concentration on the sensory characteristics of coconut sap drink yogurt. The results showed that the treatment combination with better quality characteristics than other treatment combinations was found in the treatment combination of arabic gum stabilizer and 15% concentration of skim milk. The product has characteristics: homogeneity is homogenous (3.83); acidity level is rather acid (2,65); and overall preferences are favoured (3.77). |
