Higienity and Sanitation Improvement on Chicken Satay Processing in
Small Medium Scale Industry in Desa Blater, Purbalingga District
Abstrak (Bhs. Indonesia)Sebagai Industri Kecil Menengah (IKM) dalam bidang pangan, IKM Sate Ayam Blater termasuk IKM unggulan di Kabupaten Purbalingga. Oleh karena itu, IKM ini harus ditopang oleh adanya sistem penjaminan mutu yang baik, konsisten, dan berkelanjutan. Penelitian ini bertujuan untuk: 1) mengetahui pengaruh sosialisasi dan pendampingan terhadap kondisi sanitasi pekerja dan lingkungan; 2) mengetahui pengaruh sosialisasi dan pendampingan terhadap sistem penjaminan mutu; 3) mengetahui pengaruh sosialisasi dan pendampingan terhadap kondisi higienitas dan sanitasi. Penelitian ini dilaksanakan di IKM Sate Ayam Blater yang terletak di Desa Blater, Kecamatan Kalimanah, Kabupaten Purbalingga.Penelitian ini dilakukan dengan metode kaji tindak dengan responden sebanyak 30 orang. Analisis data yang digunakan dalam penelitian ini yaitu dengan uji t. Uji t dilakukan untuk mengetahui perbedaan pada awal kaji tindak dengan akhir kaji tindak. Variabel yang diamati meliputi variabel yang berkaitan dengan: 1) sanitasi pekerja dan lingkungan:sanitasi lingkungan umum pabrik, kondisi umum sarana pengolahan, sanitasi ruang pengolahan, alat pengolahan, higiene pekerja, dan pencegahan kontaminasi silang. 2) sistem penjaminan mutu: pengawasan hewan pengerat atau serangga, susunan dan lay out, perawatan, kebersihan dan sanitasi, personil, kamar kecil, suplai air, bahan kimia, ventilasi, pembuangan limbah. 3) higienitas dan sanitasi: pengawasan hewan pengerat atau serangga, lay out produksi, perawatan prasarana penunjang, kebersihan prapengolahan, higienitas pengrajin, kebersihan kamar mandi, kondisi suplai air, sanitasi lingkungan, kondisi sarana pengolahan, pencegahan kontaminasi silang. Hasil penelitian menunjukkan kegiatan sosialisasi dan pendampingan dapat memperbaiki kondisi sanitasi pekerja dan lingkungan, sistem penjaminan mutu, dan kondisi higienitas dan sanitasi pada IKM Sate Ayam Blater.
Abtrak (Bhs. Inggris) Consumer demands on agro-industry products of high quality and quality continue to increase. Currently food processing is mostly done by small and medium scale household industries both in urban and rural areas. Quality assurance and food security are often used as technical requirements in local trade. Based on data obtained from Kemenkop in 2013, of all business class shows that small-scale enterprises in Indonesia occupy about 99% portion, meaning that almost all business in Indonesia is small business, only 1% which is medium and big business. As a Small and Medium Enterprises (IKM) in the field of food, IKM Sate Ayam Blater including leading IKM in Purbalingga District. Therefore, this IKM must be supported by a good, consistent, and continuous quality assurance system. This study aims to: 1) identify the effect of socialization and assistance on the sanitary conditions of workers and the environment; 2) to know the effect of socialization and assistance to the quality assurance system; 3) to know the effect of socialization and assistance on hygiene and sanitation conditions. This research was conducted in Small and Medium Industry (IKM) Sate Ayam Blater located in Blater Village, Kalimanah District, Purbalingga District. This research was conducted by the method of action research with 30 respondents. Data analysis used in this research is by t test. The t test was conducted to determine the difference at the beginning of the action study with the end of the action study. Variables included variables related to: 1) sanitation of workers and the environment: general factory environmental sanitation, general conditions of processing facilities, sanitation of treatment rooms, processing equipment, worker hygiene, and prevention of cross contamination. 2) quality assurance system: rodent or insect supervision, arrangement and lay out, maintenance, sanitation and sanitation, personnel, toilet, water supply, chemicals, ventilation, waste disposal. 3) hygiene and sanitation: rodent or insect monitoring, production lay out, supporting infrastructure maintenance, pretreatment hygiene, craftsman hygiene, bathroom hygiene, water supply conditions, environmental sanitation, condition of treatment facilities, prevention of cross contamination. The results showed that socialization and assistance activities could improve the sanitary conditions of workers and the environment, quality assurance system, and hygiene and sanitation conditions in Small and Medium Size Industry (IKM) Sate Ayam Blater.
