| Judul Artikel | PENGARUH KONSENTRASI LARUTAN PERENDAM KULIT PISANG TERHADAP PENYUSUTAN BOBOT DAN TINGGI RONGGA UDARA TELUR AYAM NIAGA PETELUR PASCA PANEN |
| Abstrak (Bhs. Indonesia) | Tujuan penelitian ini adalah untuk mengetahui konsentrasi larutan kulit pisang kepok (Musa paradisiaca normalis) yang terbaik sebagai pelapis edible telur ayam niaga petelur. Materi yang digunakan adalah 90 butir telur ayam niaga petelur. Metode penelitian dilakukan secara eksperimen dengan menggunakan Rancangan Acak Lengkap (RAL), sebagai perlakuan yaitu konsentrasi larutan kulit pisang sebesar : 20% (P1), 30% (P2) dan 40% (P3). Setiap perlakuan terdiri dari enam kali ulangan dan masing-masing ulangan terdiri dari lima telur. Variabel yang diamati adalah penyusutan bobot dan tinggi rongga udara.Rata-rata penyusutan bobot telur (%) dan tinggi rongga udara (mm) untuk P1, P2, dan P3 secara berturut-turut adalah 2.33 ± 0.19, 2.37 ± 0.29, 2.33 ± 0.24 dan 10 ± 0.74, 9,57 ± 0,52, 9,42 ± 0,38. Hasil analisis variansi menunjukkan bahwa konsentrasi larutan perendam kulit pisang berpengaruh tidak nyata (P> 0,05) terhadap penyusutan bobot telur dan tinggi rongga udara. Kesimpulan dari penelitian ini adalah penggunaan konsentrasi larutan kulit pisang untuk melapisi telur sebesar 20% dengan perendaman selama 24 jam dapat mempertahankan kualitas telur yang disimpan selama 30 hari dalam temperatur ruang. |
| Abtrak (Bhs. Inggris) | The aim of this research is to investiged concentration of banana kepok peel solution (Musa paradisiaca normalis) the best as edible coating of chicken egg commercial layer. Nineteen commercial chicken egg was used. The research method was conducted experimentally with the design Completely Randomized Design (RAL), as the treatment was concentration of banana peel solution namely: concentration of 20% (P1), 30% (P2) and 40% (P3). Each treatment was six replicated and each replicate consist five eggs. The observed variables were depreciation of weight and height of the egg air sac. The average of egg weight depreciation and the high of air sac egg for P1, P2, and P3 were 2.33 ± 0.19, 2.37 ± 0.29, 2.33 ± 0.24 and 10 ± 0.74, 9,57 ± 0,52, 9,42 ± 0,38 respectively. Analysis of variance showed that concentration banana peel solution not significant effect (P> 0.05) on an egg weight depreciation and the high of air sac egg. The conclusion of this research is the best concentration of banana peel solution for coating egg in 20% with soaking for 24 hours can maintain the quality of eggs stored for 30 days in room temperature. |
