| Abstrak (Bhs. Indonesia) | Usaha pembuatan tahu di Desa Selanegara Kecamatan Kaligondang Kabupaten Purbalingga menghasilkan tahu kuning dan tahu goreng yang mempunyai ukuran berbeda-beda. Penelitian ini bertujuan untuk 1) mengetahui profil pengrajin tahu kuning dan tahu goreng, 2) Menghitung harga pokok produksi, 3) Menghitung besarnya biaya total, penerimaan, keuntungan dan menghitung kombinasi ukuran tahu yang paling menguntungkan, 4) Menghitung batas kenaikan harga kedelai yang masih bisa ditolerir pada usaha pembuatan tahu kuning dan tahu goreng. Penelitian dilaksanakan mulai 1 April sampai 7 Mei 2017 di Desa Selanegara Kecamatan Kaligondang Kabupaten Purbalingga. Metode pengambilan sampel dilakukan secara purposive sampling, dengan pertimbangan pengrajin menghasilkan dua jenis tahu yaitu tahu kuning dan tahu goreng, penggunaan bahan baku diatas 50 kilogram per proses produksi dan diperoleh sampel sebanyak 4 orang pengrajin tahu. Analisis data meliputi: 1) analisis deskriptif, 2) harga pokok produk bersama, 3) analisis biaya, penerimaan, keuntungan, 4) analisis sensitivitas. Hasil penelitian menunjukkan profil pengrajin tahu kuning dan tahu goreng di Desa Selanegara adalah umur rata-rata pengrajin 45 tahun, memiliki jumlah anggota keluarga sebanyak 4 orang, rata-rata berpendidikan formal SD, dan mempunyai pengalaman pembuatan tahu selama 27,25 tahun. Rata-rata harga pokok produksi tahu kuning sebesar Rp197,00 per buah, sedangkan rata-rata harga pokok produksi tahu goreng sebesar Rp500,00 per buah. Rata-rata biaya total pembuatan tahu kuning dan tahu goreng pada Bulan April 2017 sebesar Rp22.239.815,00; penerimaan sebesar Rp26.364.387,00; dan keuntungan sebesar Rp4.124.572,00. Kombinasi ukuran tahu kuning dan tahu goreng yang paling menguntungkan adalah produk yang dihasilkan oleh pengrajin II yaitu produk B dengan ukuran 2,2 cm x 4,5 cm, produk F (ukuran 8,3 cm x 8,3 cm), dan produk G (ukuran 8,3 cm x 4,5 cm). Batas kenaikan harga kedelai tertinggi yang masih bisa ditolerir pada usaha pembuatan tahu kuning sebesar 48,57 persen, sedangkan pada usaha pembuatan tahu goreng sebesar 44,24 persen. |

| Abtrak (Bhs. Inggris) | Tofu making business in Selanegara Village Kaligondang District, Purbalingga Regency produces yellow tofu and fried tofu which have different size. This study aims to 1) know profile craftsman yellow tofu and fried tofu in Selanegara Village, 2) calculate the cost of production, 3) calculate the amount of cost, revenue, income and calculate the combination size of tofu which is the most profitable, 4) calculate the soybean price increase limits that can still be tolerated business yellow tofu and fried tofu. The data was collected from April 1 to May 7, 2017 in Selanegara Village Kaligondang District Purbalingga Regency. The sampling method was done by purposive sampling, with the consideration of the craftsmen to produce two types tofu which are yellow tofu and fried tofu, the use of raw material above 50 kilogram per production process and got the sample as much as 4 people tofu craftsmen. Data analysis includes: 1) descriptive analysis, 2) joint cost, 3) cost analysis, revenue, income, 4) Sensitivity analysis. The result of the research shows that the average age of the craftsman of 45 years, has 4 family members, the average is formal education primary school, and has experience of making tofu for 27,25 years. The average cost of tofu production yellow tofu is Rp197,00 per piece, while fried tofu is Rp500,00 per piece. The average total cost of making yellow tofu and fried tofu during April 2017 is Rp22.239.815,00; revenue is Rp26.364.387,00 and income is Rp4.124.572,00. The most profitable combination size yellow tofu and fried tofu is produced craftsman II, that is product B with size of 2,2 cm x 4,5 cm, product F (size 8,3 cm x 8,3 cm), and product G (size 8,3 cm x 4,5 cm). The highest limit of soybean price increase that can still be tolerated at yellow tofu making business is 48,57 percent, while the business of making fried tofu is 44,24 percent. |
