| Abstrak (Bhs. Indonesia) | Penelitian ini bertujuan untuk 1) mengetahui pengaruh konsentrasi kitosan terhadap mutu dan masa simpan buah jambu biji, 2) mengetahui pengaruh jenis kemasan plastik terhadap mutu dan masa simpan buah jambu biji, serta 3) mendapatkan kombinasi terbaik antara konsentrasi kitosan dan jenis kemasan plastik terhadap mutu dan masa simpan buah jambu biji. Penelitian dilaksanakan di Laboratorium Agronomi dan Hortikultura Fakultas Pertanian Universitas Jenderal Soedirman pada bulan Juni sampai dengan bulan Juli 2016. Penelitian ini berupa percobaan laboratorium dengan rancangan perlakuan faktorial 3 x 4. Faktor yang pertama adalah jenis kemasan plastik yang terdiri dari tiga macam, yaitu tanpa kemasan, kemasan plastik polipropilen, dan kemasan plastik wrapping, sedangkan faktor kedua adalah konsentrasi kitosan yang terdiri dari 4 taraf, yaitu konsentrasi 0, 1 , 2 , dan 3 %. Semua kombinasi perlakuan dialokasikan ke dalam rancangan lingkungan acak lengkap dengan 3 ulangan. Setiap unit percobaan terdiri atas 10 buah jambu biji. Data hasil pengamatan dianalisis menggunakan uji F dan dilanjutkan dengan uji DMRT 5%. Hasil penelitian menunjukkan 1) konsentrasi kitosan 2% dapat mempertahankan kekerasan buah sebesar 3,53 kg/cm2 dan memperpanjang masa simpan jambu biji yaitu 343,92 jam, 2) jenis kemasan plastik PP dan wrapping dapat mempertahankan mutu buah dan memperpanjang masa simpan jambu biji, 3) kombinasi perlakuan tanpa plastik dengan konsentrasi 3% dapat mempertahankan masa simpan 160,08 jam, perlakuan plastik PP dengan konsentrasi kitosan 2% mempertahankan masa simpan 343,92 jam, dan perlakuan plastik wrapping dengan konsentrasi 1% mempertahankan masa simpan 304,08 jam. Dari ketiga kombinasi perlakuan tersebut yang memberikan pengaruh terbaik adalah konsentrasi 2% dan plastik PP dalam mempertahankan masa simpan jambu biji yaitu 343,92 jam. |

Inggris) | This research aims to 1) determine the effect of chitosan concentration on the quality and shelf life of guavas, 2) determine the effect of plastic packaging on the quality and shelf life of guavas, and 3) determine the ideal combination of chitosan concentration and type of packaging plastics on the quality and shelf life of guavas. The research was conducted in the Laboratory of Agronomy and Horticulture Faculty of Agriculture, University of General Soedirman in June to July 2016. The research was in the form of laboratory experiments with the design of treatments factorial 3 x 4. The first factor was the type of plastic packaging that consists of three kinds, without packaging , polypropylene plastic, wrapping plastic and the second factor was the concentration of chitosan which consists of 4 levels, namely the concentration of 0, 1, 2 and 3%. All treatment combinations was allocated to the environment completely randomized design with three replications. Each experimental unit consisted of 10 pieces of guava. The data were analyzed using the F test and continued with DMRT 5%. The results showed 1) the concentration of chitosan 2% can maintain hardness of 3,53 kg/cm2and extended the shelf of guava is 343,92 hours, 2) type of plastic packaging PP and wrapping can maintain the quality and extended the shelf of guava, 3) a combination of treatments without plastic with chitosan concentration of 3% to maintain the shelf life is 160,08 hours, plastic packaging PP with chitosan concentration of 2% maintain the shelf life is 343,92 hours, plastic packaging wrapping with chitosan concentration of 1% maintain the shelf life is 304,08 hours. The three treatment combination which gives the best effect is a chitosan concentration of 2% and a kind of plastic packaging PP in maintain the shelf life of guava is 343,92 hours. |
