Abstrak (Bhs. Indonesia)Buah stroberi (Fragaria vesca L.) menggandung flavonoid memiliki aktivitas antioksidan. Penelitian ini bertujuan untuk mengetahui pengaruh kombinasi konsentrasi Karbopol 940 dan Triethanolamine (TEA) terhadap sifat fisik dan stabilitas sediaan gel, mengetahui formula terpilih sediaan gel ekstrak etanolik buah stroberi, dan mengetahui persen peredaman formula terpilih sediaan gel terhadap radikal 1,1-difenil-2-pikrilhidrazil (DPPH).
Sedian gel ekstrak etanolik buah stroberi diformulasikan dengan variasi konsentrasi Karbopol 940 (0,5 : 1 : 1,5 : 2 % b/v) dan variasi konsentrasi TEA, (0,75 : 1,5 : 2,25 : 3,0 % b/v). Sediaan Gel di evaluasi sifat fisik selama 28 hari dan stabilitas fisik dengan metode Freeze-thaw sebanyak 5 siklus. Formula terpilih di uji antioksidan dengan metode DPPH. Hasil evaluasi sifat fisik yaitu organoleptis, pH, homogenitas dan stabilitas disajikan secara deskriptif. Hasil evaluasi viskositas, daya sebar, daya lekat dan uji aktivitas antioksidan di analisis menggunakan uji ANOVA satu arah dengan taraf kepercayaan 95%. Data yang berbeda signifikan, di lanjutkan dengan uji LSD.
Hasil sifat fisik dan uji stabilitas dapat meningkatkan viskositas dan daya lekat menurunkan daya sebar serta dapat mempertahankan stabilitas sedian gel. Formula terpilih sediaan gel adalah formula 1 dengan konsentrasi Karbopol 0,5% dan TEA 0,75 %. Persen peredaman formula terpilih terhadap radikal DPPH sebesar 85,46%.

This study was conducted to determine the concentration combinations effect of carbopol 940 and Triethanolamine (TEA) towards the physical properties and the stability of the gel preparations, define the chosen gel preparations of the ethanolic extract of strawberries, and measure the inhibition effect of the chosen formula against 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical.
The gel preparations of the ethanolic extract of strawberries were prepared in various carbopol 940 (0.5:1:1.5:2% b/v) and TEA (0.7:1.5:2.25:3.0 %b/v) concentrations. Gel preparations evaluation was conducted in 28 days to determine the physical properties of the preparations and the physical stability using Freeze-thaw method in 5 cycles. The chosen preparation was then evaluated the antioxidant activities using DPPH method. Results of the physical properties evaluations expressed descriptively for the organoleptic properties, pH, homogeneity, and stability. The viscosity, dispersive power, adhesiveness, and antioxidant activity test results were analyzed using one way ANOVA with 95% confidence interval. The significantly different data was then continued with LSD test.
Results of the physical properties and the stability of the preparations could increase the viscosity and the adhesiveness properties could reduce the dispersive power and also maintain the gel stability. The chosen formula was the formula 1 with 0.5% carbopol concentration and 0.75% TEA. The percentage of the chosen formula against DPPH radical was 85.46%.
