Abstrak (Bhs. Indonesia)Penelitian ini bertujuan untuk mempelajari perbedaan bobot potong dan persentase non karkas luar sapi Peranakan Ongole dan Peranakan Simmental. Penelitian ini dilakukan di Rumah Potong Hewan (RPH) pemkab Banyumas di jalan Tambaksari Purwokerto, Kabupaten Banyumas Jawa Tengah. Materi penelitian adalah 70 ekor yang masing-masing terdiri dari 35 ekor sapi PO dan 35 ekor sapi PS yang dipilih secara purposive sampling. Paremeter yang diukur meliputi bobot potong, bobot kepala, bobot kaki, dan bobot kulit. Data penelitian dianalisis dengan uji t. Hasil penelitian menunjukkan bahwa bobot potong sapi Peranakan Ongole (PO) 386,34 kg dan sapi Peranakan Simmental 419,51 kg, sedangkan persentase non karkas luar antara sapi PO dan sapi PS antara lain kepala (4,37 % dan 5,23 %), kaki (1,95 % dan 2,19 %), serta kulit (7,03 % dan 8,35 %). Simpulan dari penelitian ini adalah bahwa bobot potong dan persentase non karkas luar (kepala, kaki dan kulit) sapi PS lebih tinggi dibandingkan dengan sapi PO.

Inggris)The purpose of this research is to know the difference of slaughter weight and the percentage of outside non carcass the Ongole crossbred and Simmental crossbred, This research carried out in the Slaughter house animals (RPH) pemkab Banyumas in the District of Tambaksari ,Banyumas Regency, Purwokerto, Central Java. The research material were 70 heads of cows including 35 heads of Ongole crossbred and 35 heads of Simmental crossbred. Those selected by purposive sampling. The parameter measured including slaughter weights, head weight, leg weight, and skin weight. Data were analyzed by the t-test. The results of this research showed that slaughter weight of Ongole crossbred was 386.34 kg and 419.51 kg of Simmental crossbred, while the percentage of non carcass cut between PO cows and PS cows were head (4.37% and 5.23%), foot (1.95% and 2.19%), as well as skin (7.03% and 8.35%). Inconclusion slaughter weight and percentage of the outside non carcass (head, leg, and skin) of PS cows were higher than of PO cows.
