| Abstrak (Bhs. Indonesia) | Ikan gabus (Channa striata) memiliki kandungan albumin yang tinggi. Tepung dari ikan gabus ini dapat dikembangkan menjadi food supplement. Salah satu sediaan food supplement yaitu tablet hisap. Penelitian ini bertujuan untuk mengetahui variasi kombinasi pemanis sukrosa-manitol terhadap sifat fisik tablet hisap dan tanggapan panelis terkait tingkat kesukaan dari tablet hisap tepung ikan gabus. Formula tablet dirancang dengan kombinasi pemanis sukrosa-manitol yaitu F1 (8:85%), F2, (13:80%), F3 (18:75%), F4 (23:70%). Tablet hisap tepung ikan gabus dibuat dengan metode granulasi basah dan dilakukan evaluasi tablet meliputi uji organoleptis, keseragaman ukuran, keseragaman bobot, kerapuhan, kekerasan, uji waktu hancur, dan uji hedonik. Analisis data yang digunakan adalah One Way ANOVA yang dilanjutkan dengan Least Significant Different (LSD). Metode analisis deskriptif digunakan untuk data hedonik. Hasil penelitian menunjukkan bahwa peningkatan komposisi sukrosa pada variasi kombinasi pemanis sukrosa-manitol meningkatkan keseragaman bobot, kekerasan, waktu larut dan menurunkan kerapuhan tablet. Formula yang memenuhi persyaratan fisik adalah formula IV. Formula yang diterima oleh konsumen berdasarkan parameter aroma dan tekstur dalam mulut adalah formula I. Sedangkan pada parameter rasa, formula yang terpilih adalah formula IV. |
| Abtrak (Bhs. Inggris) | Snakeheads contain high albumin. The extract of this fish can be developed into food supplements. Supplements come in different variation, one of them being troches. This study aimed to determine the effect of variation in sucrose-manitol sweetener combination toward physical properties of troches and collect feedback from panelists regarding likeness toward the troches. Variation of sucrose-manitol sweetener combination for each troches formulas were as follows, F1 (8:85%), F2, (13:80%), F3 (18:75%), F4 (23:70%). Snakeheads troches were made with wet granulation method and evaluated by organoleptic, size uniformity, weight uniformity, friability, hardness, disintegration and hedonic test. One way ANOVA was used for data analysis method, which were continued by Least Significant Difference. Hedonic data were analysed using descriptive method. Results showed the increment composition of sucrose within the variation of sucrose-manitol sweetener combination increases the weight uniformity, hardness, disolution time, and reduces friability of troches. Formula IV filled the physical properties requirements of troches. Hedonic results showed, consumers tend to like formula I regarding the scent and texture inside the mouth and formula IV regarding the taste. |
