| Judul Artikel | PENGEMBANGAN PRODUK BISKUIT MOCAF-GARUT YANG DISUPLEMENTASI HATI AYAM DAN BAYAM HIJAU UNTUK MAKANAN TAMBAHAN BALITA ANEMIA |
| Abstrak (Bhs. Indonesia) | Latar Belakang: Biskuit adalah makanan yang digemari anak balita, penggantian tepung komposit dengan bahan lokal serta penambahan sumber zat besi menjadikannya tinggi zat besi sehingga biskuit tepat digunakan sebagai makanan tambahan balita anemia. Penelitian ini bertujuan untuk mengetahui proporsi tepung komposit (mocaf dan pati garut) dan persentase bahan suplementasi (hati ayam buras dan bayam hijau) untuk mendapatkan produk biskuit dengan kandungan zat besi tinggi serta karakteristik sensori yang dapat diterima. Metodologi: Penelitian menggunakan Rancangan Acak Kelompok (RAK). Faktor yang dicoba terdiri dari 2 faktor yaitu, proporsi mocaf : pati garut (P, b/b) sebesar 80 : 20 (P1); 75 : 25 (P2); 70 : 30 (P3) dan persentase penambahan hati ayam : bayam hijau (S) sebesar 15% : 15% (S1); 20% : 10% (S2), sehingga terdapat 6 kombinasi perlakuan yang diulang 4x sehingga diperoleh 24 unit percobaan. Analisis variabel kimia menggunakan uji F 95% jika berbeda signifikan dilanjutkan dengan DMRT 5% dan variabel sensori menggunakan Uji Friedman, jika berbeda signifikan dilanjutkan dengan Uji Banding Ganda 5%. Kombinasi perlakuan terbaik menggunakan Indeks Efektivitas. Hasil: Perlakuan terbaik adalah biskuit P3S1 (proporsi mocaf : pati garut yaitu 70% : 30% dan persentase hati ayam buras : bayam hijau yaitu 15% : 15%) dengan kandungan energi 492,5 kkal/100 gr dengan nilai kadar air 1,47%bb; abu 1,7%bk; lemak 21,33%bk; protein 5,52%bk; karbohidrat 71,43%bk; zat besi 7,37 mg/100 gram; produk menghasilkan warna cokelat (3,2); tekstur agak remah (2,68); aroma agak amis (3,06); flavor agak enak (2,46); dan kesukaan agak suka (2,46). Kesimpulan: Perlakuan terbaik biskuit P3S1 dengan takaran saji 15 keping memberikan persen recomemmeded dietary allowance (RDA) energi balita 13,31%-18,93%; protein 6,8%-9,2% dan zat besi 35,5%-40%. |
| Abtrak (Bhs. Inggris) | Background: Biscuit is one of favored foods among toddler. It is good and precise as food supplement for toddler suffering anemia because it contains a lot of iron due to the replacement of its composite flour using local resources and increasing amount of iron resources. This research is aimed to find out the proportion of composite flour (mocaf and arrowroot starch) and the percentage of supplementation resources (free range chicken’s liver and spinach) in obtaining the product, which contains high amount of iron and acceptable sensory characteristic. Methods: The research used Randomized Block Design (RBD). Two factors were examined that consist of mocaf proportion : arrowroot starch (P, w/w) with amount of 80 : 20 (P1); 75 : 25 (P2); 70 : 30 (P3) and the percentage of supplementing chicken’s liver : spinach (S) in amount of 15% : 15% (S1); 20% : 10% (S2). Thus, there were six combinations of treatment that were repeated in four times to which obtained 24 units experiment. Chemical variables were analysed by F test 95%, if there were significant different continued by DMRT 5% and sensory variables were analysed by Friedman test, if there were significant different continued by Comparative Test Dual 5%. Effectiveness Index used to obtain the best combination treatments. Result: The result finds out that the best treatment is mocaf-arrowroot biscuit P3S1 (mocaf proportion : arrowroot starch is 70% : 30% and the percentage of free range chicken’s liver : spinach is 15% : 15%) with the amount of energy by 492,5 kcal/100 gram and the content of a water by 1,47% bb; ash by 1,7%bk; fat by 21,33%bk; protein by 5,52%bk; carbohydrate by 71,43%bk; iron by 7,37 mg/100 gram. The product obtained brown color (3,2); rather crumb texture (2,68); a bit fishy aroma (3,06); rather good flavor (2,46); and rather liked level (2,46). Conclusion: The best treatment is P3S1 with a serving size of 15 biscuits give a percent recomemmeded dietary allowance (RDA) of energy for toddlers anemia 13.31%-18.93%; protein 6.8%-9.2% and iron 35.5%-40%. |
