Abstrak (Bhs. Indonesia)Nira kelapa mudah mengalami kerusakan karena kontaminasi mikroba. Upaya yang dilakukan untuk mencegah terjadinya kerusakan nira adalah dengan menambahkan bahan pengawet nira yang dikenal dengan istilah laru. Tujuan dari penelitian ini adalah: 1) Mengetahui pengaruh formula laru alami bentuk bubuk terhadap penghambatan mikroba Saccharomyces cereviceae; 2) Mengetahui pengaruh konsentrasi laru alami bentuk bubuk terhadap penghambatan mikroba Saccharomyces cereviceae; 3) Mengetahui pengaruh interaksi perlakuan formula dan konsentrasi laru alami terhadap penghambatan mikroba Saccharomyces cereviceae. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor. Faktor pertama yaitu formula laru alami (A) yang terdiri dari 8 taraf yaitu ekstrak daun jambu biji : ekstrak daun cengkeh : larutan kapur = 5 : 5 : 90 (A1), ekstrak daun jambu biji : ekstrak daun cengkeh : larutan kapur = 10 : 10 : 80 (A2), ekstrak daun jambu biji : ekstrak daun slatri : larutan kapur = 5: 5: 90 (A3), ekstrak daun jambu biji : ekstrak daun slatri : larutan kapur = 10 : 10 : 80 (A4), esktrak daun cengkeh : ekstrak daun slatri : larutan kapur = 5: 5: 90 (A5), ekstrak daun cengkeh : ekstrak daun slatri : larutan kapur = 10: 10: 80 (A6), ekstrak daun jambu biji : ekstrak daun cengkeh : ekstrak daun slatri : larutan kapur = 5: 5: 5: 85 (A7), ekstrak daun jambu biji : ekstrak daun cengkeh : ekstrak daun slatri : larutan kapur = 10: 10: 10: 70 (A8). Faktor kedua adalah konsentrasi laru alami (K) terhadap air (b/v) yang terdiri dari 4 taraf yaitu 5% (K1), 10% (K2), 15% (K3), dan 20% (K4). Pengujian dilakukan dengan metode zona jernih. Data yang diperoleh dianalisis menggunakan Uji F, apabila menunjukkan adanya pengaruh dilanjutkan dengan Uji DMRT taraf 5%. Hasil penelitian menunjukkan bahwa formula ekstrak daun jambu biji : ekstrak daun cengkeh : ekstrak daun slatri : larutan kapur = 10: 10: 10: 70 (A8) dan konsentrasi laru alami 20% (K4) memberikan penghambatan tertinggi tertinggi terhadap Saccharomyces cereviceae, namun tidak menunjukkana adanya interaksi diantara kedua perlakuan.
Abtrak (Bhs. Inggris)Coconut sap is easily damaged because of microbial contamination. Efforts made to prevent it is by adding sap natural preservatives which called Laru. The purposes of this research are : 1) knowing the effect of natural laru formulas of inhibition of Saccharomyces cereviceae, 2) knowing the effect of natural laru concentrations of inhibition of Saccharmyces cereviceae, 3) knowing the treatment interactions of both formulas and concentrations of natural laru of inhibition of Saccharomycess cereviceae. This research was conducted by Completely Randomized Design (CRD) with two factors. First factor was Natural Laru Formulas which consist of 8 level, that were guava leaves extract: clove leaves extract: lime solution = 5: 5: 90 (A1); guava leaves extract: clove leaves extract: lime solution = 10: 10: 80 (A2); guava leaves extract: slatri leaves extract : lime solution = 5 : 5: 90 (A3) guava leaves extract: slatri leaves extract : lime solution = 10: 10: 80 (A4); clove leaves extract: slatri leaves extract : lime solution = 5: 5: 90 (A5); clove leaves extract: slatri leaves extract : lime solution = 10: 10: 80 (A6), guava leaves extract: clove leaves extract : slatri leaves extract : lime solution = 5: 5: 5: 85 (A7); guava leaves extract: clove leaves extract : slatri leaves extract : lime solution = 10: 10: 10: 70 (A8). The second factors was Natural Laru Concentrations which consist of 4 levels that were 5% (K1), 10% (K2), 15% (K3), 20% (K4). Testing was done by clear zone method. Data gained was analyzed by analysis of variance, there were significcantly influenced continued by DMRT test 5%. This researh resulting the highest inhibition of Saccharomyces cereviceae was done by guava leaves extract: clove leaves extract : slatri leaves extract : lime solution = 10: 10: 10: 70 (A8) and natural laru concentration of 20%, but both treatment did not shows interactions.
