| Abstrak (Bhs. Indonesia) | Energi merupakan hal yang penting dalam kehidupan manusia, oleh sebab itu keseimbangan energi dalam suatu sistem harus dipertahankan. Semakin banyaknya energi yang dibutuhkan dan semakin berkurangnya sumber energi yang ada mengakibatkan semakin mahal harga energi tersebut. Hasil analisis energi akan memberikan gambaran yang menyeluruh mengenai penggunaan energi dari suatu sistem yang mengkonsumsi energi sehingga sumber-sumber pemborosan energi dapat dikurangi dan efisiensi energi dapat dilakukan. Penelitian ini bertujuan untuk mengetahui jenis energi yang digunakan pada produksi gula kelapa kristal di CV. Gemati Gati Indonesia Desa Karangendep Kecamatan Patikraja Kabupaten Banyumas, dan mengetahui kelayakan usaha produksi gula kelapa kristal. Penelitian dilaksanakan selama 3 bulan pada bulan Februari - April 2016. Data primer diperoleh melalui observasi pada setiap tahapan proses produksi. Data sekunder diperoleh dari catatan atau laporan di pabrik serta pustaka lain yang mendukung. Variabel penelitian meliputi energi manusia, energi listrik, energi bahan bakar, nilai efisiensi mesin pengering, dan BEP. Proses pembuatan gula kelapa kristal dimulai dari pemilihan bahan baku, pemasakan I, penyaringan, pemasakan II, granulasi atau kristalisasi, pengayakan I, pengeringan, pengayakan II, sampai pengemasan. Dalam setiap tahap diperlukan energi untuk menjalankan proses. Hasil perhitungan menunjukkan bahwa kebutuhan energi pada produksi gula kelapa kristal per kg adalah sebagai berikut: energi manusia 0,593 MJ, energi bahan bakar sebesar 4,789 MJ dan energi listrik sebesar 0,173 x 10-3 MJ dan total energi sebesar 5,382 MJ. Berdasarkan analisis finansial yang telah dilakukan terhadap produksi gula kelapa Kristal selama tahun 2016, break even point dicapai pada produksi 10.582 kg dan penjualan Rp. 277.136.061,00 dengan asumsi harga jual Rp. 32.500,00 per kg. |

More and more energy is needed and the decreasing sources of energy resulting in more expensive price of the energy. The results of the analysis of energy will provide a comprehensive picture of the energy use of a system that consumes energy so that the sources of energy wastage can be reduced and energy efficiency can be done. This study aims to determine the type of energy used in the production of crystals coconut sugar on the CV. Gati Gemati Indonesia Village Karangendep Patikraja District of Banyumas, and determine the feasibility of the production of crystals coconut sugar.Research was conducted during three months in February - April 2016. The primary data obtained through observations at each stage of the production process. Secondary data were obtained from records or reports in the factory and other libraries that support. Variables include the study of human energy, electrical energy, fuel energy, the efficiency of the dryer, and BEP. The process of making crystals coconut sugar starts from the selection of raw materials, cooking I, filtering, cooking II, granulation or crystallization, sieving I, drying, sieving II, and packaging. The calculations show that the energy needs of the production of crystals coconut sugar per kg are: human energy 0,593 MJ, fuel energy 4,789 MJ ,electricity of 0,173 x 10-3 MJ and a total energy of 5,382 MJ.
