Abstrak (Bhs. Indonesia)Penelitian ini bertujuan untuk mengetahui kadar protein dan nilai viskositas, mengetahui hubungan kadar protein dengan nilai viskositas, serta membandingkan kadar protein dan nilai viskositas susu sapi perah di kelompok peternak Tirto Margo Utomo dan Tirto Margo Mukti di Kecamatan Sumbang, Kabupaten Banyumas. Materi yang digunakan dalam penelitian adalah susu sapi sebanyak 20 liter yang diperoleh dari kelompok peternak Tirto Margo Utomo dan Tirto Margo Mukti. Penelitian dilakukan dengan metode survei menggunakan uji “t”. Variabel yang diukur yaitu kadar protein dan nilai viskositas susu sapi. Hasil penelitian menunjukkan bahwa kadar protein susu sapi di kelompok peternak Tirto Margo Utomo dan Tirto Margo Mukti tidak memiliki perbedaan yang nyata (P > 0,05). Rataan kadar protein di kelompok Tirto Margo Utomo yaitu 2,62 ± 0,26 % dan Tirto Margo Mukti yaitu 2,70 ± 0,30 %. Rataan Nilai Viskositas di kelompok Tirto Margo Utomo yaitu 1,62 ± 0,24 cP dan Tirto Margo Mukti yaitu 1,71 ± 0,25 cP. Hasil analisis data dengan menggunakan uji “t”, menunjukan bahwa rataan Nilai Viskositas susu sapi di kelompok Tirto Margo Utomo dan Tirto Margo Mukti tidak memiliki perbedaan yang nyata (P > 0,05). Hubungan antara kadar protein dengan nilai viskositas susu diformulasikan sebagai Y = 0,5679 + 0,4118 X.

Inggris)The objective of this research was to study the levels of protein and viscosity of milk and their relationship, and to compare the levels of protein and viscosity values between those found in dairy cattle breeder group of Tirto Margo Utomo and those in Tirto Margo Mukti in the District of Sumbang, Banyumas. The research materials were 20 liter milk obtained from both farmer groups. The research used a survey method with the "t" test. The measured variables were the levels of protein and viscosity values of cow's milk. The mean level of protein found in the group of Tirto Margo Utomo was 2,62 ± 0,26% and that of Tirto Margo Mukti was 2,70 ± 0,30%. The results showed that the protein content of cow's milk found in both groups is not significantly different (P> 0,05). The average of viscosity value of the of milk at Tirto Margo Utomo group was 1.62 ± 0.24 cP, while that at Tirto Margo Mukti group was 1.71 ± 0.25 cP. The results of data analysis using the "t" test showed that the average value of cow's milk Viscosity at Tirto Margo Utomo group and Tirto Margo Mukti group is not significantly different (P>0,05). The relationship between the protein content of the milk and the viscosity grades was expressed in equation Y = 0.5679 + 0.4118 X.
