Abstrak (Bhs. Indonesia)Tujuan dari penelitian ini adalah untuk mengetahui (1) interaksi antara konsentrasi asam asetat dengan waktu ekstraksi terhadap rendemen dan kadar protein, (2) pengaruh lama waktu ekstraksi terhadap rendemen dan kadar protein, (3) pengaruh konsentrasi asam asetat terhadap rendemen dan kadar protein gelatin kulit kambing. Materi penelitian menggunakan kulit kambing betina umur 10-15 bulan (150 g) dan larutan asam asetat. Penelitian dilaksanakan secara eksperimental menggunakan Rancangan Acak Lengkap pola Faktorial. Variabel yang diukur yaitu rendemen dan kadar protein gelatin. Faktor pertama adalah konsentrasi CH3OOH (1%, 3% dan 5%) dan faktor kedua yaitu waktu ekstraksi (4, 8 dan 12 jam). Berdasarkan dua faktor terlihat sembilan kombinasi perlakuan (C1L1, C1L2, C1L3, C2L1, C2L2, C2L3, C3L1, C3L2, dan C3L3) dan setiap perlakuan diulang tiga kali. Hasil analisis varian menunjukkan bahwa konsentrasi asam asetat dan interaksi antara konsentrasi dan waktu ekstraksi berpengaruh sangat nyata (p < 0,01) terhadap rendemen gelatin kulit kambing, sedangkan waktu ekstraksi tidak berpengaruh nyata (p > 0,05). Konsentrasi asam asetat dan waktu ekstraksi berpengaruh sangat nyata (p < 0,01) terhadap kadar protein, sedangkan interaksi konsentrasi dan waktu ekstraksli berpengaruh nyata (p < 0,05) terhadap kadar protein gelatin kulit kambing. Disimpulkan bahwa konsentrasi asam 5% dan waktu ekstraksi 4 jam merupakan kombinasi terbaik untuk mendapatkan rendemen (6,2%) dan kadar protein (91,39%).

Inggris)The aims of this study are to investigate (1) the interactions between the concentration of acetic acid and extraction time on the yield and protein content, (2) the effect of the diferrence extraction time on the yield and protein content, (3) the effect of concentration acetic acid on the yield and protein content of goat skin gelatin. The research materials were the skin of female goat aged 10 – 15 months (150 g) and acetic acid solution. The experiment was conducted experimentallly using completely randomized design factorial pattern. The measured variable was the yield and protein content of gelatin. The first factor was the concentration CH3COOH (1%, 3% and 5%) and the second factor is the length of extraction time (4, 8 and 12 hours). Based on the factors there were nine treatment combinations (C1L1, C1L2, C1L3, C2L1, C2L2, C2L3, C3L1, C3L2 and C3L3) each of which was replicated three times. The results of the variance analysis show that either the concentration of acetic acid or the interaction of concentration and extraction times has a high significant effect (p < 0,01) on yield of goat skin gelatin, while the extraction times were not significantly effective (p > 0,05). The concentration of acetic acid and the extraction times have a high significant effect (p < 0,01) on protein content, while the interaction of concentration and extraction times has a significant effect (p < 0,05) on protein content of goat skin. The conclusion is that concentration of 5% acetic acid with 4 hour extraction times is the best combination treatment to get maximal yield (6.2%) and protein content (91.39%).
