Indonesia) | UKM di Indonesia saat ini dihadapkan pada situasi persaingan yang semakin ketat di antara produsen lokal maupun dari negara lain yang memasuki pasar domestik sebagai akibat berlangsungnya globalisasi dan pasar bebas. Salah satu upaya yang dapat dilakukan yaitu menerapkan Sistem Manajemen Mutu SNI ISO 9001:2008 dan kesesuaian mutu produk berdasarkan SNI 3741:2013 sebagai tantangan bagi industri untuk terus meningkatkan kualitas produk dan daya saingnya. Penelitian ini bertujuan untuk: 1) Mengetahui implementasi dokumen Sistem Manajemen Mutu SNI ISO 9001:2008 pada UD Mulia Jaya, 2) Menilai mutu minyak kelapa berdasarkan SNI 3741:2013 pada UD Mulia Jaya, 3) Mengkaji hasil implementasi dokumen Sistem Manajemen Mutu SNI ISO 9001:2008 terhadap mutu minyak kelapa sebagai rekomendasi atau tindakan perbaikan bagi UD Mulia Jaya. Penelitian ini diawali dengan survei untuk memperoleh data awal, penyusunan dokumen mutu SNI ISO 9001:2008, penilaian analisis kesenjangan (gap analysis) menggunakan form checklist, kemudian hasil penilaian gap analysis diuji dengan Uji T. Hasil penelitian menunjukkan bahwa rata-rata pencapaian setiap klausul SNI ISO 9001:2008 sebesar 33,6% meningkat menjadi 75,8% setelah dilakukan implementasi, menunjukkan bahwa Sistem Manajemen Mutu pada UD Mulia Jaya sudah berjalan dengan baik meskipun dalam pelaksanaannya masih kurang konsisten. Hasil pengujian laboratorium menunjukkan bahwa minyak kelapa yang diproduksi pada UD Mulia Jaya beberapa uji telah memenuhi persyaratan SNI 3741:2013, kecuali kadar air sebesar 0,74% (SNI, maksimum 0,15%) dan cemaran logam tembaga sebesar 0,83 mg/kg (SNI, maksimum 0,1 mg/kg). |

Inggris) | Small and Medium Enterprises in Indonesia currently faced a strong competition among local industries, as well as from other countries entering the domestic market as a result of the ongoing globalization and free markets. One of the efforts is the implementation of Quality Management System documents SNI ISO 9001:2008 and quality products based on SNI 3741:2013 as a challenge for the industry to continuously improved its product quality and competitiveness. This purposes of the research are: 1) Studying the implementation of Quality Management System documents based on SNI ISO 9001:2008 at UD Mulia Jaya. 2) Assessing the quality of coconut oil based on SNI 3741:2013 at UD Mulia Jaya. 3) Doing review for the results of implementation of Quality Management System documents SNI ISO 9001:2008 for the quality of coconut oil as a recommendation or corrective actions to UD Mulia Jaya. This research begins with survey to obtain preliminary data, drafting the documents of the quality SNI ISO 9001:2008, the assessment of gap analysis using the form checklist, gap analysis assessment results are then tested with T-Test. The data of this research was analyzed using Paired Samples T-Test for presence the influence before and after implementation of Quality Management System documents SNI ISO 9001:2008 and descriptive analysis are used to assess the quality of UD Mulia Jaya’s coconut oil based on SNI 3741:2013. The results showed that the average achievement of each clause of SNI ISO 9001:2008 prior to implementation is 33,6% increase to 75.8% after implementation over three months on UD Mulia Jaya. These results indicate that the Quality Management System in UKM are going well, although still less consistent by its implementation. Some test of the laboratory results showed that coconut oil on UD Mulia Jaya, were suitable with the requirements by SNI 3741:2013, unless evaporates moisture and compounds of 0.74% (SNI, maximum 0.15%) and copper metal impurities of 0.83 mg/kg (SNI, maximum 0.1 mg/kg). Based on the results of the implementation, the recommendation is to improve the implementation of quality management system continuously in order to produce a quality product of coconut oil which were suitable to the SNI 3741:2013 as well as be used as a reference to improve competitiveness in developing the coconut oil business. |
