| Abstrak (Bhs. Indonesia) | Industri Kecil Menengah (IKM) Dodol Tape Sirsak Super “Ibu Nur” merupakan salah satu IKM pemproduksi dodol tape sirsak di daerah Ajibarang. Penelitian ini bertujuan untuk mengetahui konsistensi mutu produk yang dihasilkan dalam setiap proses produksinya dilihat dari kandungan kadar air, kadar abu dan total sukrosa. Penelitian ini dilaksanakan di IKM Dodol Tape Sirsak Super “Ibu Nur” Desa Lesmana Kecamatan Ajibarang Kabupaten Banyumas. Penelitian ini menggunakan metode teknik pengendalian mutu statistik dan simple random sampling dalam pengambilan sampelnya. Pengujian dan analisis dilakukan di Laboratorium Teknologi Pertanian, Fakultas Pertanian UNSOED, Purwokerto. Penelitian dilakukan dari bulan September 2015 sampai bulan Januari 2016. Hasil Penelitian menunjukkan bahwa parameter mutu kadar air, kadar abu dan total sukrosa dari analisis histogam berada dalam batas-batas spesifikasi produk. Analisis dari bagan kendali untuk kadar air dan kadar abu berada dalam keadaan tidak terkendali, parameter mutu total sukrosa berada dalam keadaan terkendali, untuk bagan kendali R menunjukkan bahwa keragaman semua parameter mutu dalam keadaan terkendali. Diagram pareto menunjukkan bahwa urutan penyimpangan atau kerusakan dari yang tertinggi hingga terendah yaitu kadar air, kadar abu dan total sukrosa. Diagram sebab akibat memperlihatkan penyebab terjadinya penyimpangan dari beberapa faktor yaitu : bahan baku, pengolahan, pekerja dan peralatan. Focus Group Discussion (FGD) menghasilkan penyebab terjadinya penyimpangan dari beberapa faktor. |
| Abtrak (Bhs. Inggris) | Small and Medium Enterprise (SME) of Dodol Tape Sirsak “Ibu Nur” is one of the SME that produce dodol made from fermented cassava and soursop located on Ajibarang. This research aimed to find out the consistency of quality product in every production process which could be seen from various contents, such as, water, ash, and total sucrose content. This research has been done at Small and Medium Enterprise (SME) of Dodol Tape Sirsak “Ibu Nur” Desa Lesmana Kecamatan Ajibarang Kabupaten Banyumas. The research used statistical quality control method and Simple random sampling has been used to determine the sampling size. Trial and analysis have been done at Agricultural Technology Laboraotium, Faculty of Agriculture, Jenderal Soedirman University, Purwokerto, and the research was conducted from September 2015 to January 2016. The research showed that the average quality parameter value of water ash, and total sucrose content which gotten from histogram analysis are still within the boundaries of product specifications. The control chart analysis for water and ash content are in the unrestrained condition while the total sucrose content is in the restrain condititon. The R-bar control chart analysis showed that all contents are in restrain conditions. Pareto diagram showed the order of deviation or incongruity from the highest to the lowest which is water content, ash content, and total sucrose content. Cause and effect diagram showed the causes of damage are from several factors, such as, raw materials, processing, employees, and equipment.Forum Group Discussion (FGD) has generate the causes of deviation from several factors. |
