| Abstrak (Bhs. Indonesia) | Industri Kecil Menengah (IKM) Sari Bumi merupakan produsen gula kelapa di Purbalingga dengan berpedoman pada dokumen sistem penjaminan mutu yang berisi kegiatan terencana dan sistematis. Sistem penjaminan mutu yang baik, konsisten, dan berkelanjutan dapat berpengaruh pada mutu produk. Penelitian ini bertujuan untuk: 1) Mengetahui tingkat persepsi kemudahan pelaksanaan terhadap dokumen prosedur mutu, 2) Mengetahui tingkat pelaksanaan responden terhadap dokumen prosedur mutu, 3) Mengetahui tingkat persepsi kemudahan pelaksanaan terhadap dokumen instruksi kerja, 4) Mengetahui tingkat pelaksanaan responden terhadap dokumen instruksi kerja, 5) Mengetahui pengaruh kegiatan kaji tindak terhadap karakteristik mutu gula kelapa IKM Sari Bumi berdasarkan SNI 01-3743-1995. Penelitian ini dilaksanakan di Industri Kecil Menengah Sari Bumi gula kelapa kristal Desa Bojong, Kecamatan Mrebet, Purbalingga. Penelitian dilakukan menggunakan metode kaji tindak dengan responden sebanyak 40 orang. Hasil penelitian menunjukkan kegiatan kaji tindak meningkatkan persepsi tingkat kemudahan terhadap dokumen prosedur mutu pada setiap elemen. Kegiatan kaji tindak meningkatkan tingkat pelaksanaan terhadap dokumen prosedur mutu pada setiap elemen. Kegiatan kaji tindak meningkatkan persepsi tingkat kemudahan terhadap dokumen instruksi kerja proses produksi dan penggunaan utilitas dari agak mudah (5,2-5,4) menjadi mudah (5,9), sedangkan instruksi kerja pembuangan air buangan tetap sama mudah. Kegiatan kaji tindak meningkatkan tingkat pelaksanaan terhadap dokumen instruksi kerja proses produksi dari dilaksanakan cukup baik (3,2) menjadi dilaksanakan dengan baik (3,7), sedangkan penggunaan utilitas dan pembuangan air buangan tetap sama dilaksanakan cukup baik. Kegiatan kaji tindak dapat memperbaiki sifat sensori, kadar air, kadar abu, dan gula reduksi pada gula kelapa kristal di IKM Sari Bumi. |

Inggris) | Small and Medium Enterprise (SME) Sari Bumi is a crystals palm sugar producers in Purbalingga which referring to the document that contains the quality assurance system planned and systematic activities. A good quality assurance system is consistent, sustainable and can affect the quality of the product. This research aimed to determine: 1) Knowing the respondents’ perception level of the convenience of the quality procedure document implementation, 2) Knowing the respondents’ implementation level of the quality procedures document, 3) Knowing the respondents’ perception level of the convenience of the work instructions document implementation, 4) Knowing the respondents’ implementation level of the work instructions document, 5) Knowing the impact of action research to the quality characteristics of Sari Bumi’s crystal palm sugar based on SNI 01-3743-1995. This research was conducted in the Sari Bumi Small and Medium Enterprise which produces crystals palm sugar in Bojong Village, Mrebet District, Purbalingga. The research was done by using action research method and the number of respondents was 40 people. The results showed that action research activities enhance the perception of the convenience level of the quality assurance system on each element. It also increased the level of implementation of the quality assurance system document on each element. Action research activities enhanced the perception of the level of the convenience of the work instruction document in production process and the usage of utilities from ‘rather easy’ (5.2 to 5.4) becomes easy (5.9), while the work instructions remain the same in waste water disposal element. It also increased the level of implementation of the work instruction document production process from implemented fairly well (3.2) to be implemented properly (3.7), while the usage of utilities and disposal of waste water remain the same as before which is good enough. This action research can improve the sensory properties, moisture content, ash content, and reducing sugar in crystals palm sugar in Sari Bumi. |
