| Abstrak (Bhs. Indonesia) | Ubi jalar (Ipomoea batatas L.) merupakan salah satu komoditas pertanian yang banyak diminati oleh pasar karena potensinya sebagai bahan pangan, bahan baku industri, dan pakan ternak. Untuk dapat memenuhi kebutuhan pasar, diperlukan produk ubi jalar yang bermutu baik. Penelitian ini bertujuan untuk: 1) Mengetahui pengaruh jenis bahan pengemas plastik terhadap kualitas ubi jalar (Ipomoea batatas L.) selama penyimpanan, dan 2) Mengetahui pengaruh lama penyimpanan terhadap kualitas ubi jalar (Ipomoea batatas L.) selama penyimpanan. Penelitian ini dilaksanakan di Laboratorium Teknik Pengolahan Pangan dan Hasil Pertanian, Jurusan Teknologi Pertanian, Universitas Jenderal Soedirman, Purwokerto. Penyimpanan dilakukan selama 10 hari dengan perlakuan tanpa kemasan (P0T), kemasan plastik LDPE (P1T), kemasan plastik HDPE (P2T), kemasan plastik PP (P3T). Variabel yang diukur adalah kadar air, susut bobot, kekerasan, kadar brix, warna dan cacat pada umbi. Percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL) dan data dianalisis menggunakan persamaan kinetika reaksi. Hasil penelitian menunjukkan bahwa kemasan plastik mampu mempertahankan kadar air dengan jenis plastik LDPE sebesar 66,08% pada akhir penyimpanan, penurunan susut bobot terendah dengan jenis plastik PP sebesar 0,01% pada akhir penyimpanan, penurunan tingkat kekerasan terendah dengan menggunakan jenis plastik PP yaitu 0,0445 kgf per hari, peningkatkan kadar brix tertinggi dengan menggunakan jenis plastik LDPE yaitu 12 Brix pada akhir penyimpanan, penurunan nilai kecerahan terendah yaitu dengan jenis plastik HDPE sebesar 0,0083 per hari, penurunan nilai warna kemerahan (a+) terendah dengan jenis plastik HDPE sebesar 0,0733 per hari, penurunan nilai warna kekuningan (b+) terendah dengan jenis kemasan PP sebesar 0,0135 per hari. Kemasan plastik juga memperlambat terbentuknya poyo, namun mempercepat pertumbuhan tunas pada umbi. |
| Abtrak (Bhs. Inggris) | Sweet potato ( Ipomœa batatas l. ) is one of agricultural commodities favorite by the market because its potential as food, raw materials industry, and fodder. To able to meet a need market , required products sweet potato who very nice. This research was aimed: 1) Aware of plastic packaging the effect on the quality of sweet potato ( Ipomoea batatas l . ) for storage, 2) Knowing the effect of a long storage on the quality of the sweet potato (Ipomœa batatas l .) during storage. Research carried out in laboratory of food processing technique and agricultural product , Agricultural Technology , University of Jenderal Soedirman , purwokerto. Storage was conducted over 10 days in needed none of packaging (P0T) , plastic packaging LDPE ( P1T ) , plastic packaging HDPE ( P2T ) and , plastic packaging PP ( P3T ) .Variable measured is the water level , weight loss , hardness , brix levels , color and defects in tubers. Experiments used is a random complete (RAL) and data analyzed use equation kinetics reaction. This research result indicates that plastic packaging able to maintain the water level with a kind of plastic LDPE of 66,08 % last day of storage , the lowest weight loss are PP plastic 0.01 % in last storage , the decline in by lowest hardness are PP plastic namely 0,0445 kgf per day, the brix highest levels are LDPE plastic that is 12 brix at the end of storage , the lowest reduction in the value of brightness lowest is with a kind of plastic HDPE of 0,0083 per day , the lowest reduction in the value of a rosy color ( a + ) are HDPE plastic packaging of 0,0733 per day, the lowest fall in the value of a yellowish color ( b + ) are PP packaging of 0,0135 per day. Plastic packaging also slow down the establishment of the poyo , but expedite the growth shoots at tubers . |
