| Abstrak (Bhs. Indonesia) | Penelitian bertujuan membandingkan produktivitas kefir grain akibat penambahan prebiotik inulin dan sirup jagung serta pengaturan temperatur inkubasi. Penelitian dilaksanakan menggunakan metode eksperimen dengan Rancangan Acak Lengkap (RAL) Pola Faktorial 6 perlakuan dan 4 ulangan. Faktor pertama adalah pengaturan temperatur meliputi temperatur ruang (24 – 31oC) dengan rataan 26.5oC dan terkontrol 31oC. Faktor kedua adalah pengaturan media meliputi perlakuan kontrol, penambahan inulin, dan penambahan sirup jagung. Peubah yang diukur adalah pertumbuhan (%), ukuran kefir grain (mm), dan pH kefir. Hasil penelitian terhadap pertumbuhan kefir grain menunjukkan interaksi pengaturan media dan temperatur inkubasi berpengaruh tidak nyata, namun, pengaturan media dan temperatur inkubasi berpengaruh sangat nyata. Interaksi pengaturan media dan temperatur inkubasi berpengaruh tidak nyata terhadap kefir grain, sedangkan temperatur inkubasi menunjukkan hasil berpengaruh sangat nyata terhadap kefir grain. Interaksi, pengaturan media dan temperatur inkubasi berpengaruh tidak nyata terhadap ukuran kefir grain. Kesimpulan dari penelitian ini adalah pertumbuhan kefir grain tertinggi dihasilkan dari penambahan inulin dan temperatur ruang (24 – 31oC). Ukuran kefir grain dari perlakuan pengaturan media maupun temperatur inkubasi dihasilkan ukuran yang relatif sama. Nilai pH kefir terendah dihasilkan dari temperatur terkontrol 31oC. |
| Abtrak (Bhs. Inggris) | The purpose of this study was to investigate the productivity of kefir grain as affected by media and temperatures manipulation. The study was conducted using experimental method with a completely randomized design, factorial pattern 2 x 3 with four replications for each treatment combination. The first factor was temperature which included a room temperature (24 – 31oC) with temperature average was 26.5oC and a controlled temperature of 31oC. The second factor was media manipulation which included control, addition of inulin and addition corn syrup. The parameters measured were kefir grain growth (%), kefir grain size (mm), and kefir pH. Results on kefir grain growth showed that temperatures and media interaction has no significant effect. However, independently medium and temperature has significant effects on kefir grain growth. Kefir pH value showed that temperatures and media interaction has no significant effect, while temperature incubation has significant effect. Interaction, temperatures and medium incubation has not significant on kefir grain size. It can be concluded that the highest growth of kefir grain was produced from addition of inulin and incubation at room temperature (24 – 31oC). Kefir grain size from medium and temperature manipulation treatment was produced relatively similiar size. The lowest kefir pH was produced by controlled temperature 31oC. |
